Ingredients needed and substitutions:
Whole Wheat Flour - We used whole wheat flour for this galette recipe as it contains more iron, calcium, protein, and other nutritional elements than white flour.
You can certainly use all purpose flour or even gluten free flour if you have any special dietary preferences.
Fresh Peaches - This fruit galette is perfect to make with seasonal fruits. Hopefully it is peach season when you are making this and can get some freestone county peaches. If it is not peach season you can swap with canned sliced peaches.
Fresh Blueberries - We like to use delicious summer fruit so if you have access to fresh blueberries try to use those. If not you can use frozen blueberries.
How to Make a Peach Blueberry Galette
1: Making the Crust: Place your flour, sugar and salt in a food processor and use the pulse button to gently mix.
2: Add in the oil and butter and use the pulse button to gently blend into coarse crumbs.
3: Add 3-4 tablespoons of ice water and pulse until a dough forms.
4: Form your dough into a disc shape and wrap in plastic wrap. Place in the fridge for 30 minutes until firm.
5: Make your filling: In a large bowl combine sliced peaches and blueberries with ⅓ cup sugar, lemon juice and salt in a medium bowl.
6: Preheat oven to 375 degrees F and cover a large baking sheet with parchment paper.
7: On a lightly floured surface roll out your dough with a rolling pin to a 13 inch round.
8: Transfer dough to baking sheet. Pour filling into center of dough in a mound leaving a 2-3 inch border.
9: Fold edge of dough up and over filling, pleating as you go.
10: Brush edges of dough with milk - sprinkle with Turbinado sugar which is a coarse sugar.
11: Bake until filling is tender and crust is browned 35-40 minutes.
12: Cool Galette on a wire rack to room temperature. Cut into 10 wedges. Serve with a scoop of vanilla bean ice cream.

- 1 Tablespoon of Cold Salted Butter Cut into Pieces
- 4 Tablespoons of Cold Water
- For the Filling
- 2 Fresh Peaches Cut into Wedges
- 6 ounces of Fresh Blueberries
- ⅓ cup of Sugar
- 1 Pinch of Salt
- 1 Teaspoon of Lemon Juice
- 2 Teaspoons of Fat Free Milk to Coat the Crust
- A Pinch of Turbinado Sugar to Sprinkle on the Crust
Instructions
