I baked these Apple Cinnamon Muffins two different ways. I made them the traditional way baked in the oven with a Muffin tin but I also tried baking them in my Air Fryer using Silicone Baking Cups.

They actually came out better in the Air Fryer. It took less time to bake and they came out full and moist. If you do not have an Air Fryer don't worry as they were just as delicious from the oven they just looked prettier baked in the Air Fryer.

Ingredients:
- 2 Cups of All Purpose Flour
- ¼ Cup of Truvia Brown Sugar Blend
- 1 Cup of Unsweetened Applesauce - Preferably Homemade - See my 6 MINUTE HOMEMADE APPLESAUCE RECIPE
- 1 Tablespoon of Cinnamon
- 1 Teaspoon of Baking Powder
- ½ Teaspoon of Baking Soda
- ½ Teaspoon of Salt
- ½ Cup of Vegetable Oil
- 2 Eggs Beaten
- 1 ½ Teaspoon of Vanilla Extract
- CRUMB TOPPING INGREDIENTS:
- ⅓ Cup of Truvia Brown Sugar Blend
- 2 Tablespoons of Flour
- ¼ Teaspoon of Cinnamon
- 1 Tablespoon of Butter cut into small pieces
- Optional - For Extra Apple Flavor add 1 cup of finely diced apple pieces
- APPLESAUCE INFUSION:
- ½ Cup of Unsweetened Applesauce
Preparation Instructions:
1: Preheat Oven to 375 Degrees F and grease your 12 Cup Muffin Tin
If you are using your Air Fryer you will preheat for 5 minutes at 360 Degrees before baking.
2: In a medium bowl stir together the dry ingredients - Flour, Cinnamon, Baking Powder, Baking Soda and Salt.
3: In a large mixing bowl blend together the wet ingredients - Vegetable Oil, Brown Sugar Blend, Eggs, Applesauce and Vanilla Extract.
4: Now take your 2 bowls of Ingredients and mix together in one large bowl.
5: Spoon your muffin batter into your greased Muffin Tins for Oven Bake. If you are using your Air Fryer fill your Silicone Muffins liners with the Batter about ¾ full.
6: In a small bowl combine the Brown Sugar Blend, Flour, Cinnamon and Cut Butter Cubes and mix them all together and then sprinkle on top of the Batter in each Muffin Cup as a topping.
7: Bake in the Oven for about 20 minutes. If you are baking in your Air Fryer you will Bake at 360 Degrees for 15 minutes. Since the Air Fryer is not as large as the oven you will have to bake them in Batches. My Air Fryer Can hold about 4 Muffin Cups in the air fryer basket at a time.
8: Remove from oven when cooking is complete and let cool on a wire rack.
9: Fill your Flavor Injector Syringe with Applesauce and insert into each Muffin to infuse a small amount of Applesauce inside the Muffin. This takes your ordinary Muffins to the next level.
*** If you do not like filling in your Muffin just skip step 9 - they are delicious with or without the filling.
10: Serve, Eat and Enjoy!
