Easy to Make - Preparing these fluffy donuts requires only a handful simple ingredients and 15-25 minutes of cook time.
Ingredients needed and substitutions:
Fresh Blueberries - We used a ½ cup of fresh juicy blueberries for this donut recipe.
Lemon Zest and Lemon Juice - Grab a fresh Meyer lemon from the grocery and use a grater to make your lemon zest. When you are done you can squeeze the lemon for fresh homemade lemon juice.
Unsweetened Applesauce - Vermont Village organic unsweetened applesauce was used for these homemade donuts. I have an easy instant pot applesauce recipe if you want to make your own just click here.
Get the Perfect Donut Molds
My family enjoys donuts, but we don’t enjoy going out and eating donuts full of dyes. So I searched for a perfect silicone mold for donuts. This is it. You get 3 colors tha are vibrant, wash nicely and allows me to make donuts at home! They easily pop out of the mold ! It’s so nice to have them not stick and keep perfect form - NO BPA ! For the win. How to Make Blueberry Lemon Donuts:
1: Preheat your oven to 350 degrees F. Grease your donut pan with cooking spray.
2: Mix your dry ingredients - flour, sugar substitute (Stevia), baking powder, baking soda and salt.
3: Mix your wet ingredients - Applesauce, Greek yogurt, egg, lemon zest, lemon juice and vanilla extract.
4: Combine the wet and dry ingredients together - mix well. Now drop blueberries into the batter and fold together.
5: Pour your donut batter into your prepared donut pan. You can spoon it into the donut mold or place your donut batter in a piping bag which is probably the easiest way and fill your donut molds this way.
6: Bake 15-25 minutes until golden brown. Remove and let cool on a wire rack to room temperature.
7: You can whip up a quick lemon glaze with 1 cup of powdered sugar, 2 ½ tablespoons of lemon juice and 1 teaspoon of lemon zest to pour over your donuts for a zesty lemon glaze.
