Who doesn't love indulging in a guilt-free treat that satisfies both the sweet tooth and the waistline? 

If you're nodding along, craving something delightful to accompany your morning cup of coffee, then you're in for a treat with these baked blueberry lemon donuts!


Units Scale
  • 1 cup of Flour
  • 1/3 cup of Stevia
  • 1 Teaspoon of Baking Powder
  • 1/4 Teaspoon of Baking Soda
  • A Pinch of Salt
  • 1/2 cup of Unsweetened Applesauce
  • 1/4 cup of Plain Greek Yogurt
  • 1 Egg
  • Zest of 1 Lemon
  • 1 Tablespoon of Fresh Lemon Juice
  • 1 Teaspoon of Vanilla Extract
  • 1/2 cup of Fresh Blueberries


  1. Preheat your oven to 350 degrees F. Grease your donut pan with cooking spray.
  2. Mix your dry ingredients -  flour, sugar substitute (Stevia), baking powder, baking soda and salt.
  3. Mix your wet ingredients - Applesauce, Greek yogurt, egg, lemon zest, lemon juice and vanilla extract.
  4. Combine the wet and dry ingredients together - mix well. Now drop blueberries into the batter and fold together.
  5. Pour your donut batter into your prepared donut pan. You can spoon it into the donut mold or place your donut batter in a piping bag which is probably the easiest way and fill your donut molds this way.
  6. Bake 15-25 minutes until golden brown. Remove and let cool on a wire rack to room temperature.
  7. You can whip up a quick lemon glaze with 1 cup of powdered sugar, 2 1/2 tablespoons of lemon juice and 1 teaspoon of lemon zest to pour over your donuts for a zesty lemon glaze.
