- 1/3 cup of Stevia

- A Pinch of Salt
- 1/2 cup of Unsweetened Applesauce
- 1/4 cup of Plain Greek Yogurt
- 1 Egg
- Zest of 1 Lemon
- 1 Tablespoon of Fresh Lemon Juice
- 1 Teaspoon of Vanilla Extract
- 1/2 cup of Fresh Blueberries
Instructions
- Preheat your oven to 350 degrees F. Grease your donut pan with cooking spray.
- Mix your dry ingredients - flour, sugar substitute (Stevia), baking powder, baking soda and salt.
- Mix your wet ingredients - Applesauce, Greek yogurt, egg, lemon zest, lemon juice and vanilla extract.
- Combine the wet and dry ingredients together - mix well. Now drop blueberries into the batter and fold together.
- Pour your donut batter into your prepared donut pan. You can spoon it into the donut mold or place your donut batter in a piping bag which is probably the easiest way and fill your donut molds this way.
- Bake 15-25 minutes until golden brown. Remove and let cool on a wire rack to room temperature.
- You can whip up a quick lemon glaze with 1 cup of powdered sugar, 2 1/2 tablespoons of lemon juice and 1 teaspoon of lemon zest to pour over your donuts for a zesty lemon glaze.
