Description

Who doesn't love indulging in a guilt-free treat that satisfies both the sweet tooth and the waistline?

If you're nodding along, craving something delightful to accompany your morning cup of coffee, then you're in for a treat with these baked blueberry lemon donuts!

Ingredients

Units Scale
  • 1 cup of Flour
  • 1/3 cup of Stevia
  • 1 Teaspoon of Baking Powder
  • 1/4 Teaspoon of Baking Soda
  • A Pinch of Salt
  • 1/2 cup of Unsweetened Applesauce
  • 1/4 cup of Plain Greek Yogurt
  • 1 Egg
  • Zest of 1 Lemon
  • 1 Tablespoon of Fresh Lemon Juice
  • 1 Teaspoon of Vanilla Extract
  • 1/2 cup of Fresh Blueberries

Instructions

  1. Preheat your oven to 350 degrees F. Grease your donut pan with cooking spray.
  2. Mix your dry ingredients -  flour, sugar substitute (Stevia), baking powder, baking soda and salt.
  3. Mix your wet ingredients - Applesauce, Greek yogurt, egg, lemon zest, lemon juice and vanilla extract.
  4. Combine the wet and dry ingredients together - mix well. Now drop blueberries into the batter and fold together.
  5. Pour your donut batter into your prepared donut pan. You can spoon it into the donut mold or place your donut batter in a piping bag which is probably the easiest way and fill your donut molds this way.
  6. Bake 15-25 minutes until golden brown. Remove and let cool on a wire rack to room temperature.
  7. You can whip up a quick lemon glaze with 1 cup of powdered sugar, 2 1/2 tablespoons of lemon juice and 1 teaspoon of lemon zest to pour over your donuts for a zesty lemon glaze.

Notes

  • Try adding a scoop of cake mix: Opt for a box of lemon cake mix labeled "sugar-free" or "low-sugar" for a lighter option that fits well within your Smart Points allowance.
  • Mind the Size of Your Donut Pans: Ensure your donut pans are standard size, typically around 3 inches in diameter, to yield perfectly shaped donuts.
  • Incorporate Almond Milk: Swap out regular milk for unsweetened almond milk to reduce the calorie and fat content while maintaining a creamy texture and delicious flavor.
  • Use Wild Blueberries: Incorporate wild blueberries for their intense flavor and smaller size, which disperses throughout the batter more evenly, ensuring a burst of blueberry in every bite without adding extra points.
  • Ensure a Moist Texture: To keep your donuts moist, avoid overmixing the batter. Stir until just combined to prevent gluten development, which can lead to a tougher texture.
  • Mind the Top of the Donuts: Smooth the batter level in each donut cavity before baking to achieve a uniform shape and ensure even baking.
  • Enhance Flavor with Lemon Extract: Boost the lemony flavor by adding a splash of lemon extract to the batter. This will provide a concentrated burst of citrus essence without adding extra points.
  • Optimize Lemon Icing: Prepare a light lemon icing using powdered sugar, lemon juice, and a touch of lemon zest. Keep it thin for easy drizzling over the donuts, adding a delightful tangy sweetness without sabotaging your Smart Points budget.
