Place them in a plastic Ziploc Baggie, seal, and store at room temperature for up to 3 days. If you place them in the refrigerator they will last up to a week. To freeze the mini muffins wrap them tightly in heavy foil or place them in Ziploc Freezer bags, and freeze for up to 3 months.

- 3 Bananas
- 3 Eggs
- 1 Cup of Kodiak Cakes Cinnamon Oats Power Cakes Flapjack and Waffle Mix ( Or any flavor you like - the Dark Chocolate is Delicious also)
Preparation Instructions:
1: Take your Bananas and peel them.
2: Place your Bananas in a large bowl and smash them really good with a fork until they are really mushy.
3: Now add in your eggs to the Bananas and mix together well.
4: Now add your Kodiak Cake Mix and stir everything together. Mix it well.
***Special Note - If you add 2 Teaspoons of Baking Powder the Muffins will come out Bigger and Fluffier
5: Take out your regular size Muffin pan and spray the holes with some Olive Oil spray so the Muffins do not stick.
6: Now take your Muffin Mixture and pour the Batter into each Muffin hole - fill each hole about halfway with the mixture.
7: Now place into the oven at 350 Degrees for 15-20 minutes.
8: When cooking time is complete remove from the oven and let cool.
9: When removing the Muffins from the pan just run a butter knife around the edges and they should pop right out easily.
10: Now ready to eat...if you have any leftovers make sure to refrigerate them and then just heat up in the Microwave when you want a snack.

I dont want to waste a can of pumpkin since its hard to find right now but, do you think it would work if I subbed canned pumpkin for the bananas? I am dying for a LOW point pumpkin muffin 🙂

Hi Aubrey I have never tried using pumpkin puree but I have a feeling it would work. I say try it..go with 1/3 cup of pumpkin puree in place of the bananas and let me know how it turns out.

Hi. I wanted to make this recipe, but I’m confused on how you got the muffin to equal one point. Is it one point only on purple plan? Or for all 3 plans? When Input the information in my app it gives me more than just 1 point for each muffin. (I’m a newbie and maybe doing something wrong)

Hi Lauren Bananas and Eggs are Zero Points on all 3 plans and using one cup of the Cinnamon Oat Waffle Mix is 15 points so just spread your batter to make 15 muffins at one point each. If you use the Dark Chocolate Power Cakes Mix one cup is equal to 13 Points so make a batch a 13 muffins for one point.

I’m on WW and I was so excited to see these are only 1 point. However after calculating it using the above nutrition facts, it’s actually 5 points on the Green Plan. Dang, but yummy!

Hi Nancy - I have been following the Purple and Blue Plan alternating both and if I use one cup of the Cinnamon Oat Batter or Dark Chocolate Batter and make between 12-15 muffins out of the batter it is one point. If it is coming out higher on your Green plan just make mini muffins so you have a larger batch (20-25 mini muffins) but smaller size this way you make them 1 point and still get to enjoy a tasty treat 🙂

I’ve made chocolate with banana, oat cinnamon with apple sauce, but now I want to try buttermilk with pumpkin. Any idea how much pumpkin would equal the 3 banana?

I used 1/2 c of unsweetened applesauce instead of a banana. Made a test batch with 1 egg/ 1/2 c applesauce and 1/2 Kodiak and it turned out great. Made with the chocolate mix. Sometimes I don’t want the underlying banana taste. I didn’t know how it would work ... whew ... it was fine.

i used low carbohydrate wheat or buckwheat pancake mix turned out well i added 1 pkt of instant oatmeal apple sprinkle the top to. loved it with the sugar free one.
