Canadian Bacon - We used pre-cooked slices of Canadian bacon for these maple bacon pancake muffins, If you don't like Canadian bacon you could swap for mini bacon bits.
Protein Pancake Mix: Kodiak Cakes Whole Wheat Oat & Honey was used for this Canadian bacon breakfast. You can swap with your favorite protein pancake mix and even try different flavors.
This Flavor-Packed Power Cakes Bundle Pack brings together four of the most popular flavors of Power Cakes Flapjack and Waffle Mix that Kodiak Cakes has to offer! This mix can be used to make protein-packed muffins, flapjacks or waffles - whatever you're feeling! How to Make Kodiak Pancake Mix Muffins
1: Pre heat oven to 350 Degrees F. Line 12 muffin cups with paper liners in your muffin tin.
2: Coat a Medium Non Stick skillet or griddle with nonstick cooking spray. Heat over medium heat. Add Canadian bacon; sauté until lightly browned for about 3 minutes. Remove from heat and cool slightly then chop into small pieces.
3: In a large bowl stir together pancake mix, 1 ½ cups of water, maple syrup and vanilla extract. Then fold in ½ of the chopped Canadian bacon.
4: Divide batter evenly into muffin cups. Sprinkle remaining Canadian bacon on top.
5: Bake 18-20 minutes total time at 350 degrees F.

- 1 Teaspoon of Vanilla Extract

- Pre heat oven to 350 Degrees F. Line 12 muffin cups with paper liners in your muffin tin.
