How do I Cook the Zucchini Stuffed Pizza?
I prepared them 2 ways. Version one was prepared by baking in the oven at 450 Degrees F for 25 minutes. Version two was in my Air Fryer for 15 minutes at 360 Degrees. They came out perfect both ways so if you have an Airfryer that works perfect for a single portion and if you are making a batch use your oven.
How long can I store leftovers in my Refrigerator?
If you store your leftovers in a proper Airtight Container, your cooked Zucchini Slices should last 3 -4 Days.
How do I Re Heat my Leftover Pizza Bites?
Just remove them from the storage container and place them in your Air Fryer for 5 minutes or pop them back in the Oven or Toaster Oven for 10 minutes.

What Kitchen Tools do I need?
- A Large Baking Pan
- A Sharp Knife
- Mini Ninja Chopper or any Kitchen Chopper
Ingredients Needed:
- 4 Medium Zucchinis
- 1 Small Onion
- A Pinch of Salt & Pepper
- ½ Teaspoon of Garlic
- ¾ Cup of Marinara Sauce - I like Rao's Marinara Sauce
- 1 Cup of Part Skim Ricotta
- 1 ¼ Cups Fat Free Mozzarella Cheese
- ¼ Cup of Grated Parmesan Cheese
- 1 Teaspoon of Italian Seasoning
- 6 grape tomatoes sliced
- 4 Mushrooms sliced
- Fresh Chopped Basil
Preparation Instructions:
1: Preheat oven to 450 Degrees F. If you have an Air Fryer you can cook your Zucchini Pizzas in the Air Fryer Basket for 15 minutes at 360 Degrees.
2: Cut each Zucchini in half lengthwise.
3: Using a spoon, scoop out the flesh from the Zucchini. Place the Zucchini Shells on a large baking sheet pan. * Note - to make it easy to scoop out the inside of the Zucchini I used a small knife to cut a crisscross pattern and then used a spoon to scoop. Making the cuts in the Zucchini flesh makes it easy to scoop.
4: Take the Zucchini Flesh you scooped out and place in a bowl and set aside.
5: Chop your Onion into small chunks and place in your Mini Kitchen Chopper with the Garlic and Zucchini Flesh and Pulse until you get a smooth blend. If you do not own a Kitchen Chopper you can dice everything as fine as possible.
6: Transfer the Zucchini mixture pureee to a bowl and add in the Ricotta Cheese, ¾ Cup of the Mozzarella, Parmesan Cheese and Italian Seasoning. Stir well, and season with Salt and Pepper.
7: Divide the mixture and stuff the Zucchini Shells. Spread Marinara Sauce on top of the stuffed Zucchini Boat then Sprinkle with the remaining ½ Cup of Mozzarella. Top with sliced tomatoes and mushrooms or whatever you like. Bake until golden brown 20-30 minutes.
8: Garnish with Parmesan and chopped Basil before serving.
