Zucchini - Fresh picked from the garden zucchini's were used for this chocolate cake zucchini recipe. If you don't have a garden you can find fresh zucchini at your local grocery store or farm stand.
Cocoa Powder - Hershey's Unsweetened Cocoa Powder was used for this healthy cake recipe. You can use your favorite brand of cocoa powder.
All Purpose Flour - We used all purpose flour for this zucchini chocolate cake but you could swap with whole wheat flour, almond flour or gluten free flour if you want to make a gluten-free chocolate zucchini cake.
How to Make Healthy Zucchini Cake
1: Preheat your oven to 350 degrees F. Spray a 9x13 pan with oil and lightly flour the pan.
2: Peel and grate 3 medium zucchini's and set aside.
3: In a large bowl combine flour, sugars, unsweetened cocoa powder, baking soda & salt.
4: In a small bowl combine milk, oil, eggs and vanilla extract.
5: Pour wet ingredients into dry ingredients and mix together.
6: Add the shredded zucchini into cake batter and mix gently.
7: Pour batter into greased 9x13 pan. Bake in oven for 35-40 minutes. Sprinkles some chocolate chips on top for a double chocolate zucchini cake.
8: Remove and let cool on a wire rack. Cut into 24 snack cakes. Serve with a side of ice cream or vanilla yogurt.

Ingredients
- 2 ¾ cups of Flour
- 1 cup of Sugar
- 1 cup of Brown Sugar
- ½ cup of Unsweetened Cocoa Powder
- 1 Teaspoon of Baking Soda
- ½ Teaspoon of Sea Salt
- ¾ cup of Fat Free Milk
- ½ cup of Canola Oil
- 4 Eggs
- 1 ½ Teaspoon of Vanilla Extract
- 2 ½ cups of Grated Zucchini
- Optional - ⅛ Teaspoon of Confectioners Sugar to Sprinkle on Top with some chocolate chips.
Instructions
- Preheat your oven to 350 degrees F. Spray a 9x13 pan with oil and lightly flour the pan.
