Description

Do you love indulging in a dessert that boasts a rich chocolate flavor while still being healthy? If you're a chocolate lover like me, you're in for a treat with this moist & healthy chocolate zucchini cake!


Ingredients

Units Scale
  • 2 3/4 cups of Flour
  • 1 cup of Sugar
  • 1 cup of Brown Sugar
  • 1/2 cup of Unsweetened Cocoa Powder
  • 1 Teaspoon of Baking Soda
  • 1/2 Teaspoon of Sea Salt
  • 3/4 cup of Fat Free Milk
  • 1/2 cup of Canola Oil
  • 4 Eggs
  • 1 1/2 Teaspoon of Vanilla Extract
  • 2 1/2 cups of Grated Zucchini
  • Optional - 1/8 Teaspoon of Confectioners Sugar to Sprinkle on Top with some chocolate chips.


Instructions

  1. Preheat your oven to 350 degrees F. Spray a 9x13 pan with oil and lightly flour the pan.
  2. Peel and grate 3 medium zucchini's and set aside.
  3. In a large bowl combine flour, sugars, unsweetened cocoa powder, baking soda & salt.
  4. In a small bowl combine milk, oil, eggs and vanilla extract.
  5. Pour wet ingredients into dry ingredients and mix together.
  6. Add the shredded zucchini into cake batter and mix gently.
  7. Pour batter into greased 9x13 ban. Bake in oven for 35-40 minutes. Add a handful of chocolate chips on top at about the 30 minute mark if you like extra chocolate on top.
  8. Remove and let cool on a wire rack. Cut into 24 snack cakes. Serve with a side of ice cream or vanilla yogurt.
