- 2 3/4 cups of Flour
- 1 cup of Sugar
- 1 cup of Brown Sugar
- 1/2 cup of Unsweetened Cocoa Powder
- 1 Teaspoon of Baking Soda
- 1/2 Teaspoon of Sea Salt
- 3/4 cup of Fat Free Milk
- 1/2 cup of Canola Oil
- 4 Eggs
- 1 1/2 Teaspoon of Vanilla Extract
- 2 1/2 cups of Grated Zucchini
- Optional - 1/8 Teaspoon of Confectioners Sugar to Sprinkle on Top with some chocolate chips.
Instructions
- Preheat your oven to 350 degrees F. Spray a 9x13 pan with oil and lightly flour the pan.
- Peel and grate 3 medium zucchini's and set aside.
- In a large bowl combine flour, sugars, unsweetened cocoa powder, baking soda & salt.
- In a small bowl combine milk, oil, eggs and vanilla extract.
- Pour wet ingredients into dry ingredients and mix together.
- Add the shredded zucchini into cake batter and mix gently.
- Pour batter into greased 9x13 ban. Bake in oven for 35-40 minutes. Add a handful of chocolate chips on top at about the 30 minute mark if you like extra chocolate on top.
- Remove and let cool on a wire rack. Cut into 24 snack cakes. Serve with a side of ice cream or vanilla yogurt.
