Ingredients needed and substitutions:
Protein Powder - For this chocolate chip muffins recipe we used Orgain Organic Vanilla Protein Powder. You can swap with an unsweetened protein powder like pea protein and just add vanilla extract for flavoring if you don't have vanilla on hand.
PB 2 Chocolate Chip Brownie Mix - You can swap with PB 2 Powdered Peanut Butter for less chocolate if you prefer.
Chocolate Chips - Lily's Milk Chocolate Style Baking Chips are stevia sweetened making them the perfect alternative to the traditional sugar laden chocolate chips. Same chocolate flavor without the extra sugar and calories.
How to Make High Protein Muffins:
1: Preheat the oven to 325 degrees F. Line a 6 cup muffin tin with muffin liners - coat the liners with cooking spray.
2: In a large bowl whisk together the wet ingredients - yogurt, egg and 2 tablespoons of water. Now add in the dry ingredients - protein powder, PB2 Powder, Baking Powder and Sea Salt - mix well and then fold in the chocolate chips.
3: Divide muffin batter evenly into the muffin cups, place in oven and bake 18-22 minutes.
4: Remove from oven and let cool on baking rack to room temperature. Enjoy..so Yummy!!

- 2 ounces of Vanilla Protein Powder
- ½ cup of PB2 Chocolate Chip Brownie Mix
- 1 Teaspoon of Baking Powder
- ¼ Teaspoon of Sea Salt
- 2 ounces of Lily's Milk Chocolate Style Baking Chips
Instructions
- Preheat the oven to 325 degrees F. Line a 6 cup muffin tin with muffin liners - coat the liners with cooking spray.

Hi Susan, I want to make your muffin recipe but I had a question first before I attempted it. In the tips area it says to choose a high quality whey protein powder.. but in the picture that is shown with all your ingredients in their packages it shows the orgain plant based protein powder. Maybe I am missing something but my understanding of plant based protein powders are that they are not derived from animal protein such as whey. I currently use a plant based protein powder due to my dairy aversion. I cannot consume whey. I just wanted to be clear before I proceed… as whey based products do give a softer fluffier consistency to baked goods than plant based proteins… Did the protein powder you use for the muffins in the picture you took for the finished result have whey in it? Thank you in advance.. Also the use of ingredients in this recipe is genius to turn out such an indulgent looking muffin.. I can’t wait to try many of your recipes…

Hi Susan,
I used the Orgain plant based protein powder for this recipe which worked great and tasted great. Whey protein powder is recommended in a lot of baking recipes to help with the rise and structure of baked goods. But if you are like me and prefer a plant based protein powder use it as it works perfect with this muffin recipe.
