Theseย Healthy Apple Fritter Muffinsย are baked instead of fried, with soft cinnamon-apple centers, bakery-style tops, a crunchy cinnamon-oat streusel, and just enough maple glaze to give them that classic apple-fritter finish.
To keep these muffins moist without relying on lots of butter or oil, I made the batter with plain Greek yogurt and unsweetened applesauce, then added pure maple syrup and just 2 tablespoons of avocado oil.
Each muffin gets real cinnamon apples both inside the batter and on top, so you get little pieces of apple in every bite.
And don't skip the topping! I reserved some of my prettiest cinnamon apple pieces and added them to the muffins with a light cinnamon-oat streusel before baking. Once the muffins cooled, I finished them with thin ribbons of maple glaze rather than covering the entire top.

Step 1: Prepare the Cinnamon Apples
Peel and dice the apple into approximately ยผ-inch pieces.
Add the diced apples, 2 teaspoons maple syrup, 1 teaspoon cinnamon, 1-2 teaspoons water, and a pinch of salt to a small skillet.
Cook over medium-low heat for 3-4 minutes, stirring frequently, until the apples begin to soften but still hold their shape.
Remove from the heat and allow them to cool.
Before moving on: Set aside about โ of your prettiest cinnamon apple pieces. We'll use these on top of the muffins to give them that bakery-style apple fritter appearance.

Step 2: Make the Cinnamon-Oat Streusel
In a small bowl, combine the rolled oats, flour, brown sugar, and cinnamon.
Add the cold butter and use your fingertips or a fork to work it into the mixture untilย small and medium-sized crumbs form.
