Light Cinnamon Streusel

Light Maple Glaze

1/4 cup powdered sugar

1 teaspoon pure maple syrup

Instructions

Step 1: Prepare the Cinnamon Apples
Peel and cut the apple into approximately ¼-inch cubes.
Add the diced apples, maple syrup, cinnamon, water, and a tiny pinch of salt to a small skillet.
Cook over medium-low heat for approximately 3–4 minutes, stirring frequently, until the apples have softened slightly but still hold their shape.
Remove from the heat and allow to cool.
Before doing anything else, reserve about ⅓ of the prettiest apple pieces for the tops of your muffins.
This little step makes a huge difference visually.
Step 2: Make the Light Streusel
Combine the oats, flour, brown sugar, and cinnamon in a small bowl.
Add the cold butter and work it into the dry ingredients with your fingertips or a fork until small and medium crumbs form.
Put the streusel in the refrigerator while you prepare the muffin batter.
Don't crush it into fine crumbs. The larger pieces are what give you that bakery-style appearance.
Step 3: Combine the Dry Ingredients
In a large bowl, whisk together the all-purpose flour, oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Step 4: Combine the Wet Ingredients
In another bowl, whisk together the eggs, Greek yogurt, maple syrup, avocado oil, applesauce, and vanilla until smooth.
Step 5: Make the Batter
Pour the wet mixture into the dry ingredients.
Gently fold with a spatula until the ingredients are almost combined.
Fold approximately ⅔ of the cinnamon apples into the batter.
Don't overmix.
The batter should be thick and scoopable. If it seems unusually stiff, add almond milk 1 tablespoon at a time. Don't automatically add all 4 tablespoons—you don't want a runny batter.
Step 6: Rest the Batter
Allow the batter to rest for about 10 minutes.
Meanwhile, preheat the oven to 425°F and line a standard 12-cup muffin pan with liners.
Step 7: Fill the Muffin Cups
Divide the batter evenly among the 12 muffin cups.
Because we want tall, bakery-style muffins, the cups should be quite full.
Step 8: Create the Apple Fritter Tops
Now make them beautiful.
Arrange 3–4 of your reserved cinnamon apple pieces on the surface of each muffin.
Don't push them into the batter.
Sprinkle approximately 1 teaspoon of streusel over each muffin, concentrating it around the apples rather than completely covering them.
For the 3 or 4 muffins you plan to photograph, deliberately choose the brightest, prettiest apple pieces and the largest streusel crumbs.
Step 9: Bake
Bake at 425°F for 5 minutes.
Without opening the oven door, reduce the temperature to 350°F.
Continue baking for approximately 13–17 minutes, or until the tops are golden and a toothpick inserted into the muffin portion comes out clean or with a few moist crumbs.
Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack.
Step 10: Make the Light Maple Glaze
Once the muffins are completely cool, whisk together the powdered sugar and maple syrup.
Add almond milk ½ teaspoon at a time until you have a thick but drizzleable glaze.
A thicker glaze is better than a watery glaze because you'll need much less of it to create visible white ribbons.
Step 11: Drizzle — Don't Frost!
Use a teaspoon to drizzle very thin zigzags of glaze across each muffin.
You don't need much.
Leave plenty of apple, cinnamon streusel, and golden muffin showing underneath.
Allow the glaze to set before serving.
Notes
- Best apples: Honeycrisp and Granny Smith work especially well because they hold their shape while baking. Fuji, Pink Lady, or Braeburn are also good choices.
- Dice the apples small: Aim for about ¼-inch pieces so you get apple in every bite and the muffins bake evenly.
- Don't overcook the apples: Cook them only until slightly softened. They will continue cooking in the muffins.
- Keep the batter thick: The batter should be thick and scoopable. Add almond milk only if it seems unusually stiff, 1 tablespoon at a time.
- Don't overmix: Fold the wet and dry ingredients together just until combined for soft, tender muffins.
- Rest the batter: Letting the batter sit for about 10 minutes before baking helps hydrate the oat flour and gives the muffins a better texture.
- For tall muffin tops: Start at 425°F for 5 minutes, then reduce the oven to 350°F without opening the oven door and finish baking.
- Cool before glazing: Let the muffins cool completely or the maple glaze will melt and disappear into the topping.
- Storage: Store in an airtight container for up to 2 days at room temperature or about 5 days refrigerated. I prefer refrigerating them after the first day or two because of the moist apple filling.
- Freezing: Freeze the muffins without the glaze for up to about 3 months. Thaw and add fresh glaze before serving.
