Ingredients needed and substitutions
Green Apple - We used a Granny Smith apple for this apple cookie recipe which you can find at any local grocery store. If you can't find a Granny Smith you can use a honey crisp apple.
Whole Wheat Flour - You can use whole wheat flour or all purpose flour as an even swap. Whole wheat flour just contains more fiber.
Unsweetened applesauce - You can use Mott's unsweetened applesauce or make your own homemade applesauce.
Caramel Chips - Baker's Choice caramel chips were used in these caramel apple cookies. You can swap with Lily's salted caramel chips for a salted caramel cookies recipe. Add in some chocolate chips for salted caramel chocolate chip cookies.
How to make Caramel Apple Cookies
1: Preheat your oven to 350 degrees F. Line a baking pan with parchment paper.
2: Peel and chop 1 apple into small chunks.
3: In a medium bowl combine your dry ingredients - Flour, Baking Soda, Salt, Cinnamon & Nutmeg - Mix well.
4: In a large bowl combine your wet ingredients - Coconut Oil, Unsweetened Applesauce, Honey, Vanilla Extract and 1 Egg. Mix well.
5: Combine the wet and dry ingredients and stir them together - add in the chopped apple and caramel chips - blend together.
6: Use a cookie scoop or spoon to drop dough balls onto your parchment lined baking pan about 2 inches apart. Flatten slightly with a spoon and add a couple of caramel chip on top of the cookies.
7: Bake 10-12 minutes until golden. Let cool on a wire rack.
8: Optional - melt ¼ cup of caramel chips in the microwave and drizzle over cookies. Ready to Eat!
