In my opinion this is the best way to describe them and they are now one of my most favorite Air Fryer Recipes.
I had never made a recipe with curry paste prior to this one and although I do love hot and spicy I chose the Thai Red Curry Paste to be safe since that one is right in the middle of hot and mild for this Curried Sweet Potato Fritter Recipe.
If you're new to Curry Paste like me you can try using a hotter version like Green Thai Curry paste or Thai Yellow Curry paste for a milder flavor. All curry pastes are usually located in the Asian or Indian section of your supermarket.

Ingredients needed and substitutions for Air Fryer Potato Fritters
Sweet Potato - For this recipe you can use on one medium Beauregard sweet potato which is the most popular orange potato. Feel free to try the purple aka Garnet as well for a pop of color. You can even use a Russet potato if you want to make a variety of potato fritters.
Curry Paste - Red Thai Curry Paste was my choice for these curried sweet potato fritters. If you like a milder spice try the Rani's mild curry paste.
How to make Air Fried Sweet Potato Fritters
1: Preheat the Air Fryer to 400 Degrees for 5 minutes
2: In a Medium Bowl whisk together the eggs and curry paste.
3: Add in the grated sweet potato and fold in with your hands to coat.
4: Slowly mix in the flour and a pinch of salt and cayenne.
5: Add in the peas
6: Spray the inside of your air fryer basket with cooking spray. Carefully place small mounds ( About ¼ Cup ) of the mixture evenly around the bottom of the basket. Spray the fritters with cooking spray.
7: Cook 4 minutes. Turn the fritters over, spray them with cooking spray, and cook until they begin to brown on the edges, 4 minutes more. If you like them extra crispy you can cook them an extra minute or two on each side.
Recipe FAQ's
No, soaking sweet potatoes in water before air frying is not necessary. Sweet potatoes do not contain as much starch as regular white potatoes so you can skip this step for your sweet potato fritters.
Make sure not to overcrowd them in the basket so that there is no moisture build-up and go d air flow in your air fryer basket.
Air fryers work their best by circulating hot air, which originates at the bottom of the fryer. Lining it with aluminum foil can constrict the air flow and your food won't cook properly. If you are going to use aluminum foil in an air fryer, use a small amount in the bottom of the basket, making sure not to cover the food.

- Add binding ingredients: To help the fritters hold their shape, add binding ingredients such as flour or breadcrumbs, as well as an egg or egg substitute.
- Season well: Sweet potato fritters can be quite bland without the right seasoning, so be sure to add plenty of salt and pepper, as well as any other spices or herbs you like.

Is this Recipe Vegan Friendly?
No, but you can make it Vegan Friendly. Just swap the eggs for some Bob's Red Mill Egg Replacer.
If you don't have Egg Replacer handy you can use 1 tablespoon of finely ground flaxseed and 3 tablespoons of water to replace one egg or as my amazing Vegan Facebook friend Kelly suggested you can use a ¼ cup of Applesauce to replace one egg. There are a lot of options to try that I am sure would taste delicious!
Can I make this Recipe Gluten Free?
If you are on a restricted diet and are Gluten Sensitive then you can swap the Whole Wheat Flour for King Arthur Gluten Free Flour.

A Quick Healthy Air Fryer Treat
Ingredients
- 2 Large Eggs
- 2 Tablespoons of Curry Paste
- 1 Medium Sweet Potato peeled and grated
- ½ cup of whole wheat flour
- ½ cup of frozen peas, thawed and patted dry - I took my frozen peas and microwaved them for 30 seconds to thaw then sat them on a paper towel to pat dry
- A pinch of Himalayan Pink Salt
- A Pinch of Cayenne Pepper - feel free to add more if you like it extra spicy
- A couple of Spritz's of Olive Oil Cooking Spray
Instructions
- Preheat the Air Fryer to 400 Degrees for 5 minutes
- In a Medium Bowl whisk together the eggs and curry paste.
- Add in the grated sweet potato and fold in with your hands to coat.
- Slowly mix in the flour and a pinch of salt and cayenne.
- Add in the peas
- Spray the inside of your Air fryer basket with cooking spray. Carefully place small mounds (about ¼ cup) of the mixture evenly around the bottom of the basket. Spray the fritter mixture with cooking spray.
- Cook 4 minutes. Turn the fritters over, spray them with cooking spray, and cook until they begin to brown on the edges, 4 minutes more. If you like them Extra Crispy you can cook them an extra minute or two on each side.

If you like it only mildly spicy swap the Red Curry paste for Yellow Curry Paste or Green Curry Paste for extra spicy.
