A Quick Healthy Air Fryer Treat
Ingredients
- 2 Large Eggs
- 2 Tablespoons of Curry Paste
- 1 Medium Sweet Potato peeled and grated
- 1/2 cup of whole wheat flour
- 1/2 cup of frozen peas, thawed and patted dry - I took my frozen peas and microwaved them for 30 seconds to thaw then sat them on a paper towel to pat dry
- A pinch of Himalayan Pink Salt
- A Pinch of Cayenne Pepper - feel free to add more if you like it extra spicy
- A couple of Spritz's of Olive Oil Cooking Spray
Instructions
- Preheat the Air Fryer to 400 Degrees for 5 minutes
- In a Medium Bowl whisk together the eggs and curry paste.
- Add in the grated sweet potato and fold in with your hands to coat.
- Slowly mix in the flour and a pinch of salt and cayenne.
- Add in the peas
- Spray the inside of your Air fryer basket with cooking spray. Carefully place small mounds (about 1/4 cup) of the mixture evenly around the bottom of the basket. Spray the fritter mixture with cooking spray.
- Cook 4 minutes. Turn the fritters over, spray them with cooking spray, and cook until they begin to brown on the edges, 4 minutes more. If you like them Extra Crispy you can cook them an extra minute or two on each side.
Notes
If you like it only mildly spicy swap the Red Curry paste for Yellow Curry Paste or Green Curry Paste for extra spicy.
Choose the right sweet potatoes: Look for sweet potatoes that are firm, smooth-skinned, and free from bruises or blemishes. They should also have a deep orange color, which indicates that they are high in beta-caroten.
Grate the sweet potatoes finely: Grate the sweet potatoes finely using a box grater or food processor. This will ensure that they cook evenly and form a cohesive fritter.
Squeeze out excess moisture: After grating the sweet potatoes, place them in a clean kitchen towel and squeeze out any excess moisture. This will prevent the fritters from becoming soggy.
Add binding ingredients: To help the fritters hold their shape, add binding ingredients such as flour or breadcrumbs, as well as an egg or egg substitute.
Season well: Sweet potato fritters can be quite bland without the right seasoning, so be sure to add plenty of salt and pepper, as well as any other spices or herbs you like.
Preheat the air fryer: Preheat the air fryer for a few minutes before adding the fritters. This will ensure that they cook evenly and get crispy on the outside.
Use cooking spray: To prevent the fritters from sticking to the air fryer basket, spray it lightly with cooking spray before adding the fritters.
Don't overcrowd the air fryer: Make sure to leave enough space between the fritters in the air fryer basket so that they can cook evenly and get crispy.
Flip the fritters: Flip the fritters halfway through cooking to ensure that both sides get crispy and golden brown.
Serve immediately: Sweet potato fritters are best served hot and crispy, so serve them immediately with your favorite dipping sauce.
