Ingredients needed and substitutions:
Strawberries - We used 2 cups of fresh strawberries for this easy dessert recipe. You can swap the strawberries for peaches to make a strawberry peach cobbler or swap for cherries and make a cherry rhubarb cobbler.
Fresh Rhubarb - The next time you are at the farmers market pick up 2 bundles of fresh rhubarb.
Rolled Oats - Quick cooking rolled oats were used for this simple strawberry rhubarb cobbler. You can swap with Gluten free rolled oats or old fashioned rolled oats, they all work great for this cobbler dump cake recipe.
Coconut Sugar - I like to use coconut sugar as it is plant based and has many nutrients. You can use cane sugar or you could even use a sugar substitute like Truvia.
Honey - Honey comes in all different flavors. We used Lavender Honey for this recipe as it was Lavender season, you can use your favorite or swap with maple syrup if you don't have fresh honey available.
HOW TO MAKE STRAWBERRY RHUBARB COBBLER DUMP CAKE
1: Preheat oven to 350 degrees F.
2: Dice your strawberries and rhubarb stems into small cubes.
2: Prepare the Strawberry Rhubarb Filling: In a large mixing bowl, combine the cubed strawberries and diced rhubarb, lavender honey or maple syrup (if using), vanilla extract, lemon juice, and cornstarch or arrowroot powder. Mix well until the strawberries and rhubarb are evenly coated.
3: Spread the strawberry rhubarb mixture evenly in a greased 9x9 inch (or similar size) baking dish.
4: Prepare the Topping: In another mixing bowl, combine the rolled oats, almond flour, coconut sugar, baking powder, ground cinnamon, and salt. Stir to combine. Add the melted coconut oil and almond milk to the dry ingredients. Mix until everything is well combined and the mixture is crumbly.
5: Top the Strawberries and Rhubarb: Sprinkle the crumb mixture evenly over the strawberries in baking pan.
6: Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the strawberries and rhubarb are bubbly.

- Allow the cobbler to cool for a few minutes before serving. This allows the filling to set slightly.

- Filling - 2 Cups of Fresh Strawberries, hulled and cubed and 2 Cups of Fresh Rhubarb diced.
- 1 Tablespoon of Honey ( Lavender) or Maple Syrup
- 1 Teaspoon of Vanilla Extract
- 1 Tablespoon of Lemon Juice
- 2 Tablespoons of Corn Starch
- Topping - 1 Cup of Rolled Oats
- ½ cup of Almond Flour
- ¼ cup of Coconut Sugar
- 1 Teaspoon of Baking Powder
- ½ Teaspoon of Ground Cinnamon
- ¼ Teaspoon of Sea Salt
- ¼ cup of Melted Coconut Oil
- ¼ cup of Unsweetened Almond Milk
Instructions
- Preheat oven to 350 degrees F.
