Ingredients

Units Scale
  • For the Crust
  • 1 1/4 cups of Whole Wheat Flour
  • 1/2 Teaspoon of Salt
  • 3 Tablespoons of Canola Oil
  • 1 Tablespoon of Cold Salted Butter Cut into Pieces
  • 4 Tablespoons of Cold Water
  • For the Filling
  • 2 Fresh Peaches Cut into Wedges
  • 6 ounces of Fresh Blueberries
  • 1/3 cup of Sugar
  • 1 Pinch of Salt
  • 1 Teaspoon of Lemon Juice
  • 2 Teaspoons of Fat Free Milk to Coat the Crust
  • A Pinch of Turbinado Sugar to Sprinkle on the Crust

Instructions

  1. Making the Crust: Place your flour, sugar and salt in a food processor and use the pulse button to gently mix.
  2. Add in the oil and butter and use the pulse button to gently blend into coarse crumbs.
  3. Add 3-4 tablespoons of ice water and pulse until a dough forms.
  4. Form your dough into a disc shape and wrap in plastic wrap. Place in the fridge for 30 minutes until firm.
  5. Make your filling: In a large bowl combine sliced peaches and blueberries with 1/3 cup sugar, lemon juice and salt in a medium bowl.
  6. Preheat oven to 375 degrees F and cover a large baking sheet with parchment paper.
  7. On a lightly floured surface roll out your dough with a rolling pin to a 13 inch round.
  8. Transfer dough to baking sheet. Pour filling into center of dough in a mound leaving a 2-3 inch border.
  9. Fold edge of dough up and over filling, pleating as you go.
  10. Brush edges of dough with milk - sprinkle with Turbinado sugar which is a coarse sugar.
  11. Bake until filling is tender and crust is browned 35-40 minutes.
  12. Cool Galette on a wire rack to room temperature. Cut into 10 wedges. Serve with a scoop of vanilla bean ice cream.

Notes

  1. Choose the Finest Fruit: Select the ripest peaches and freshest blueberries you can find. Ripe peaches should be fragrant and slightly soft to the touch.

  2. Use Cold Butter: For a flaky crust, make sure your butter is cold. Dice the butter into small cubes and chill it until you’re ready to incorporate it into the dough.

  3. Pre-Chill Ingredients: Besides butter, chill your flour and mixing bowl. This helps keep the butter from melting too quickly, ensuring a flaky crust.

  4. Roll Dough Evenly: Roll out your dough to an even thickness, about 1/8 inch. This ensures even baking and a consistent texture.

  5. Leave a Border: When adding your fruit filling, leave a 2-3 inch border around the edges of the dough. This allows you to fold the edges over the filling to create the galette's rustic shape.

  6. Flavor Enhancements: Add lemon zest to the fruit filling for a zesty, aromatic touch that complements the sweetness of the peaches and blueberries.

  7. Add Vanilla Extract: A splash of vanilla extract in the fruit filling enhances the flavors and adds a lovely aroma.

  8. Toss Fruit with Care: Gently toss peaches and blueberries with sugar, fresh lemon juice, and vanilla extract to evenly coat the fruit without mashing it.

  9. Handle Dough Gently: When folding the edges of the dough over the filling, work gently to avoid tearing. The rustic look is part of a galette’s charm.

  10. Brush with Butter: Before baking, brush the edges of the dough with melted salted butter for a rich flavor and to help achieve a golden brown finish.

  11. Use a Sharp Knife: A sharp knife makes cutting peaches easier and helps maintain the integrity of the fruit slices.

  12. Chill Dough Again: After assembling the galette, chill it in the fridge for about 15 minutes. This helps firm up the dough and prevents spreading in the oven.

  13. Baking Sheet Preparation: Line your baking sheet with parchment paper to prevent sticking and make cleanup easier.

  14. Store-Bought Option: If you’re short on time, using store-bought pie dough is a convenient alternative. Just make sure it’s chilled before you start.

  15. Golden Brown Perfection: Bake the galette at a high temperature (around 375-400°F) to achieve a beautifully golden brown crust. Keep an eye on it towards the end of baking to avoid over-browning.
