Ingredients needed and substitutions:
Whole Wheat Pastry Flour - Whole wheat pastry flour was used for this peach muffin recipe as it offers more nutrients and is less processed than all-purpose flour. If you don't have whole wheat pastry flour on hand you can swap with all purpose flour.
Fresh peaches - Hopefully you are making these during peach season which is in July and August on Long Island so you can use the freshest hand picked peaches. If fresh peaches are not in season you can swap with canned peaches.
How to Make Fresh Peach Muffins:
1: Preheat oven to 375 degrees F and line a 12 cup muffin tin with paper liners.
2: In a large bowl whisk together flour, sugar, baking powder and salt.
3: In a medium bowl whisk together milk, oil, vanilla and egg.
4: Combine wet and dry ingredients together.
5: Cut 12 thin wedges from one peach. Chop remaining peach into small chunks and stir into batter.
6: Divide the batter evenly among muffin cups.
7: Top with peach wedges and turbinado sugar.
8: Bake at 375 degrees F for 20 minutes. Let cool on a wire rack and serve..Enjoy!!
