Ingredients

  • 1 3/4 cups of Whole Wheat Pastry Flour
  • 5 Tablespoons of Sugar
  • 2 Teaspoons of Baking Powder
  • 1/2 Teaspoon of Sea Salt
  • 2/3 cup of Low Fat Milk
  • 2 Tablespoons of Canola Oil
  • 2 Teaspoons of Vanilla Extract
  • 1 Egg
  • 2 Peaches Halved and Pitted
  • 1 1/2 Tablespoons of Turbinado Sugar


Instructions

  1. Preheat oven to 375 degrees F and line a 12 cup muffin tin with paper liners.
  2. In a large bowl whisk together flour, sugar, baking powder and salt.
  3.  In a medium bowl whisk together milk, oil, vanilla and egg.
  4. Combine wet and dry ingredients together.
  5. Cut 12 thin wedges from one peach. Chop remaining peach into small chunks and stir into batter.
  6. Divide the batter evenly among muffin cups.
  7. Top with peach wedges and turbinado sugar.
  8. Bake at 375 degrees F for 20 minutes. Let cool on a wire rack and serve..Enjoy!!
