- Mix mashed bananas, Greek yogurt, peanut butter, and honey until smooth and creamy. Using a food processor or whisk can help achieve a silky consistency.
- Start with 1 tablespoon of honey and adjust to taste. If your bananas are very ripe, you may need less honey for a naturally sweet bite.
- Refrigerate the filling for 15-20 minutes before scooping onto parchment-lined trays. This makes it firmer and easier to handle.
- Use a small cookie scoop or spoon to portion the mixture evenly, creating bite-sized dollops for freezing.
- Freeze the yogurt-banana bites for at least 2 hours or until completely solid. This ensures they don't fall apart when dipped in chocolate.
- Melting Chocolate Tips:
- Microwave: Heat chocolate chips in a microwave-safe bowl in 20-second intervals, stirring until smooth.Double Boiler: Place a heatproof bowl over simmering water and stir until melted.Tip: Add 1-2 teaspoons of coconut oil for a smoother, shinier coating that sets perfectly.
