Cottage Cheese - I used Good Culture Organic Cottage Cheese for this keto ice cream recipe. You can use any of your favorite brands.
Protein Powder - Keto collagen chocolate protein powder is my favorite for a boost of protein and chocolate flavor.
PB Fit - The Sugar Free Peanut Butter Powder is perfect for this Rocky Road dessert. You can use real peanut butter as a swap if you don't have PB Fit on hand.
Marshmallows - Choc Zero makes Sugar Free Marshmallows if you want to keep this low carb. If you don't mind a little sugar you can use regular marshmallows. Try the chocolate marshmallows..they are yummy!
Chocolate Chips - Lily's dark chocolate chips are stevia sweetened and work well for this keto treat. If you are not watching your sugar intake you can use Nestle's Toll House chocolate chips.
How to Make Homemade Rocky Road Ice Cream
1: Place your cottage cheese, chocolate protein powder, PBFit, almond milk and vanilla extract into your food processor and blend on high for 2-3 minutes until. creamy.
2: Now add in your chopped marshmallows, nuts and chocolate chips mix together and pour into a container and place in the freezer for 2-3 hours. To make it easy use your empty cottage cheese container to put the ice cream in to freeze.
3: Remove from freezer, add some colored sprinkles for fun and serve...creamy and delicious!!!

- 1 Scoop of PBFit (about 2 tablespoons)
