Butternut Squash - Pick a fresh one - You can tell if your butternut squash is ripe by the color and texture of the outer rind. If there are any green spots, it's definitely not ready to cook. The skin should be hard and not at all glossy, and an even color.
Vegetable Broth - I used vegetable broth for this recipe to make a vegan butternut squash soup but if you are not vegan and would like additional benefits I recommend making a bone broth butternut squash soup using something like Kettle & Fire Organic Bone Broth.
Spices - Curry, Ginger, Nutmeg and Garlic gave this recipe its bold flavors.
How to Make the Best Butternut Squash Soup
1: Peel your butternut squash, remove the seeds and then cut into small one inch cubes. Use a grapefruit spoon to remove the seeds easily.
2: Place vegetable broth and butternut squash cubes into your slow cooker/crockpot. Now add in your chopped onion, ground ginger, curry powder, nutmeg and minced garlic.
3: Cover and cook for 4 hours on high, or on low for 6-8 hours until squash is tender. Once cooking is complete you can serve as is or for an extra smooth butternut squash bisque grab an immersion blender and puree.
4: Ready to serve - garnish with some fresh parsley and grated cheese.
