Ingredient needed and substitutions:
Sugar Free Jell-O - We used Strawberry Flavored Sugar Free Jello-O for this recipe as it is Zero Points on WW.
If you are making this for a family gathering and are not worried about counting points you can make the traditional version and use the regular strawberry Jello, no need for sugar free.
Fresh Fruit - Since we were making a strawberry pretzel salad we used fresh sliced strawberries. You can easily switch it up with blueberries, raspberries or any fresh berries that are in season.
Pretzels - Since the bottom of this salad is buttery pretzel crust you are going to need 2 ½ cups of your favorite pretzels to crush into a nice pretzel mixture.
Pretzel sticks worked well and were easy to crumble. You can use a flavored pretzel or even a butter or sourdough pretzel for the crust.
Truvia - Truvia sweetener was our choice for this recipe as it is zero points on Weight Watchers. If you are not watching WW points you can use regular sugar as your sweetener.
Cream cheese - Reduced fat cream cheese worked perfectly for the cream cheese mixture. If you use fat free cream cheese you could save a couple of WW points as fat free cream cheese is zero points on WW.
Cool Whip - you can use regular cool whip, sugar free or the lite cool whip. they all work perfect for the whipped cream layer.
How to Make Strawberry Pretzel Salad
1: Preheat the Oven to 400 Degrees F.
2: For the Topping: Boil water and slice your strawberries. Then whisk together jello mix and boiling water until jello is completely dissolved. Set aside.
3: For the Crust: In. medium bowl, mix the crust ingredients. Press into a greased 9x13 inch baking dish then bake for 8 minutes. Make sure to let cool completely before adding the filling on top.
4: For the Filling: In medium bowl, beat the filling ingredients with an electric mixer on medium speed until smooth.
5: Assemble: Spread filling over the cooled pretzel crust. Make sure to spread and smooth the filling layer evenly on the top so that the Jello layer will be even too. Cover and refrigerate until cool. about 30 minutes to an hour. Then carefully spoon gelatin topping with strawberries over the filling. Refrigerate 4 to 6 hours until firm.
6: Slice and serve..Enjoy!
