- Topping Ingredients: 2 (0.6g) Packages of Sugar Free Strawberry Jell-O Mix
- 4 cups of Boiling Water
- 2 cups of Fresh Sliced Strawberries
- Crust Ingredients: 2 1/2 Cups of Crushed Pretzels
- 3 Tablespoons of Truvia or Sugar ( or your granular sweetener of choice)
- 1/2 cup of Melted Butter
- Filling: 8 Ounces of Reduced Fat Cream Cheese
- 1/2 cup of Truvia or Sugar ( or your granular sweetener of choice)
- 8 ounces of Lite Cool Whip
Instructions
- Preheat the Oven to 400 Degrees F.
- For the Topping: Boil water and slice your strawberries. Then whisk together jello mix and boiling water until jello is completely dissolved. Set aside.
- For the Crust: In. medium bowl, mix the crust ingredients. Press into a greased 9x13 inch baking dish then bake for 8 minutes. Make sure to let cool completely before adding the filling on top.
- For the Filling: In medium bowl, beat the filling ingredients with an electric mixer on medium speed until smooth.
- Assemble: Spread filling over the cooled pretzel crust. Make sure to spread and smooth the filling layer evenly on the top so that the Jello layer will be even too. Cover and refrigerate until cool. about 30 minutes to an hour. Then carefully spoon gelatin topping with strawberries over the filling. Refrigerate 4 to 6 hours until firm.

- Use a food processor to quickly crush pretzels into small, even pieces for the crust.
- If you don’t have a food processor, place the pretzels in a ziplock bag and crush them with a rolling pin.
