Expert Tips
- Use Pure Pumpkin Puree: For the best pumpkin flavor, use canned pure pumpkin puree, not pumpkin pie filling. This ensures your cookies have a natural, rich pumpkin taste without added sugars or spices.
- Balance Spices: Don’t just rely on pumpkin pie spice. Add extra cinnamon, nutmeg, ginger, or cloves to enhance the warm, comforting flavors of the cookie dough, creating a more robust spice profile.
- Chill the Dough: After mixing your dough, let it chill in the fridge for at least 30 minutes. This helps firm up the dough, making it easier to shape and preventing the cookies from spreading too much while baking.
- Use Over ripe bananas for Moisture & Sweetness: Mashed banana adds moisture and a sweetness that keeps the cookies soft and chewy, enhancing the overall texture.
- Measure Pumpkin Carefully: Too much pumpkin puree can make the cookies too wet and cakey. Stick to the recipe’s measurements for the perfect balance of moisture and texture.
- Cookie Scoop for Consistency: Use a cookie scoop to ensure your dough balls are uniform in size, resulting in even baking and consistent texture for each cookie.
- Don’t Overbake: Bake your cookies for 12-15 minutes at the recommended temperature. They should be set but still soft in the center, as they will continue to firm up while cooling.
- Use a Wire Rack: After baking, transfer your cookies to a wire rack to cool completely. This prevents the bottoms from getting soggy and helps them maintain their soft, chewy texture.
- Add a Coffee Glaze: For a true latte-inspired touch, drizzle a light coffee glaze made from powdered sugar and brewed espresso or coffee over your cookies after cooling.
- Storage Tips: Store your Pumpkin Spice Latte Cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze them in a single layer on a cookie sheet before transferring to a freezer-safe bag or container for up to 3 months. Let them thaw at room temperature before serving.
