Ingredients
- 1 cup of Fresh Pumpkin - OK to use Canned Pumpkin
- 1 Ripe Banana Mashed
- 1 Egg
- 1 1/2 cups of Rolled Oats
- 1/2 cup of Almond Flour
- 1 Teaspoon of Pumpkin Pie Spice
- 1 Teaspoon of Cinnamon
- 1/2 Teaspoon of Ginger
- 1/2 Teaspoon of Nutmeg
- 1/2 Teaspoon of Baking Soda
- 1/4 Teaspoon of Sea Salt
- 2 Tablespoons of Dark Brewed Coffee
- 1 Teaspoon of Vanilla Extract
Instructions
- Preheat your oven to 350 degrees F. Line 2 baking sheets with parchment paper. Peel and Mash 1 over ripe banana.
- In a large bowl combine your mashed banana, pumpkin puree, egg, vanilla extract, brewed coffee and mix well.
- In a separate bowl whisk together your rolled oats, almond flour, pumpkin spice, cinnamon, ginger, nutmeg, baking soda and sea salt.
- Now mix your wet and dry ingredients together to form your cookie dough.
- Use a cookie scoop to make a cookie dough balls to place onto your cookie baking sheet pan.
- Flatten each dough ball slightly with. spoon and bake 12-15 minutes until golden. Once cookie is complete cool cookies on a wire rack.
- Optional - Sprinkle with powdered sugar or drizzle a wholesome icing over the top of the cookie.

Optional Cinnamon Maple Coffee Icing Recipe:
Ingredients:
1/2 cup of Powdered Sugar
1 tablespoon of pure maple syrup
1/2 teaspoon of cinnamon
1-2 tablespoons of almond milk ( or any milk of choice)
1/2 teaspoon of vanilla extract
1 Tablespoon of Dark Brewed Coffee
Instructions:
1: In a small bowl whisk together powdered sugar, maple syrup, cinnamon, tablespoon of dark brewed coffee and vanilla extract.
2: Gradually add in almond milk until you reach a drizzling consistency.
3: Drizzle the icing over your cooled spiced pumpkin latte cookies.
4: Let the icing set for a few minutes before serving. Add some holiday sprinkles.
5: You can even use the icing to make pumpkin spice latte whoopie pies or cookie sandwiches by placing some icing in between 2 cookies.
