Ingredients needed and substitutions
Pumpkin Puree - We used Libby's 100% Pure Pumpkin for this Fall Pumpkin Dessert recipe.
Maple Syrup - You can swap with honey or even do half honey and half maple syrup.
Oat Flour - If you don't have oat flour on hand your can ground rolled oats in a mini food processor and make your own oat flour which is what we did.
How to Make Chocolate Chip Pumpkin Bars
1: Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.
2: Mix Wet Ingredients: In a large bowl, whisk together the pumpkin puree, maple syrup, egg, coconut oil, and vanilla extract until smooth.
3: Add Dry Ingredients: Add in the oat flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt. Stir until everything is just combined; avoid over-mixing.
4: Fold in Chocolate Chips: Gently fold in the chocolate chips, saving a few to sprinkle on top.
5: Bake: Pour the batter into your prepared pan, spreading it evenly. Top with the remaining chocolate chips. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
6: Cool and Slice: Let the bars cool completely in the pan before slicing. This helps them set and makes slicing easier.
7: Serve and Store: Enjoy immediately, or store leftovers in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week.

¼ cup plain Greek yogurt (non-fat or 2%)

- ¼ cup of Melted Coconut Oil
- 1 Teaspoon of Vanilla Extract
- 1 cup of Oat Flour - If you don't have Oat Flour on hand you can blend rolled oats to create your own oat flour.
