- 1 cup of Pumpkin Puree
- 1/2 cup of Maple Syrup or Honey
- 1 Egg
- 1/4 cup of Melted Coconut Oil
- 1 Teaspoon of Vanilla Extract
- 1 cup of Oat Flour - If you don't have Oat Flour on hand you can blend rolled oats to create your own oat flour.
- 1/2 Teaspoon of Baking Powder
- 1/2 Teaspoon of Baking Soda
- 1/2 Teaspoon of Cinnamon
- 1/2 Teaspoon of Pumpkin Pie Spice
- 1/4 Teaspoon of Sea Salt
- 1/2 cup of Chocolate Chips
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.
- Mix Wet Ingredients: In a large bowl, whisk together the pumpkin puree, maple syrup, egg, coconut oil, and vanilla extract until smooth.
- Add Dry Ingredients: Add in the oat flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt. Stir until everything is just combined; avoid over-mixing.
- Fold in Chocolate Chips: Gently fold in the chocolate chips, saving a few to sprinkle on top.
- Bake: Pour the batter into your prepared pan, spreading it evenly. Top with the remaining chocolate chips. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Cool and Slice: Let the bars cool completely in the pan before slicing. This helps them set and makes slicing easier.
- Serve and Store: Enjoy immediately, or store leftovers in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week.
