Easy to Make - Preparing this healthy tortellini soup recipe requires only a handful of simple ingredients and 30 minutes of cook time.
Ingredients needed and substitutions:
Sausage - For this sausage tortellini soup we used a ½ pound of sweet sausage and a ½ pound of hot sausage. To lower the fat content you can swap with chicken sausage or turkey sausage.
Tortellini - Fresh Cheese tortellini were used for this simple soup recipe. You can swap with Gluten free tortellini if you are gluten sensitive or even whole wheat tortellini for additional fiber and protein.
How to Make Creamy Sausage Tortellini Soup
1: In a large stockpot set over medium-high, cook the sweet & hot sausage, breaking up into little pieces. When the sausage is mostly browned, add chopped onion, diced celery and diced carrots, sauté for 5 minutes or until the vegetables are soft.
2: Add the garlic, spices, and tomato paste; sauté for an additional 5 minutes, or until fragrant, stirring occasionally to prevent it from burning.
3: Add wine and let it cook out for a few minutes. Stir the flour into the sausage and cook for 1 minute. It’ll be sticky and dry. Gradually add in the vegetable broth, stir to combine. Continue cooking until the mixture reaches a simmer, then reduce heat to low and simmer for 15 minutes.
4: While the soup is simmering - pre cook your cheese tortellini.
5: Add the half & half to your soup, then bring it to a low simmer. Add the pre cooked tortellini and fresh spinach. Cook an additional 5 minutes until the spinach is wilted. Serve with fresh Parmesan, Basil and Italian Bruschetta toast for dipping. So yummy!! If you like a little spice add in some red pepper flakes.

Ingredients
- One Pound of Sausage
- 1 Onion Diced
- 2 Celery Stalks Diced
- 2 Carrots Peeled and Chopped into small pieces
- 3 Cloves of Minced Garlic
- 1 Teaspoon of Salt
- ½ Teaspoon of Pepper
- ½ Teaspoon of Italian Seasoning
- 6 Ounces of Tomato Paste
- ½ Cup of Dry Wine
- ½ Cup of All Purpose Flour
- 6-7 Cups of Vegetable Broth
- 14 Ounces of Tortellini
- 2 Cups of Half and Half
- 1 Cup of Fresh Spinach
