Ingredients
Scale
- One Pound of Sausage
- 1 Onion Diced
- 2 Celery Stalks Diced
- 2 Carrots Peeled and Chopped into small pieces
- 3 Cloves of Minced Garlic
- 1 Teaspoon of Salt
- 1/2 Teaspoon of Pepper
- 1/2 Teaspoon of Italian Seasoning
- 6 Ounces of Tomato Paste
- 1/2 Cup of Dry Wine
- 1/2 Cup of All Purpose Flour
- 6-7 Cups of Vegetable Broth
- 14 Ounces of Tortellini
- 2 Cups of Half and Half
- 1 Cup of Fresh Spinach
Instructions
- In a large stockpot set over medium-high, cook the sweet & hot sausage, breaking up into little pieces. When the sausage is mostly browned, add chopped onion, diced celery and diced carrots, sauté for 5 minutes or until the vegetables are soft.
- Add the garlic, spices, and tomato paste; sauté for an additional 5 minutes, or until fragrant, stirring occasionally to prevent it from burning.
- Add wine and let it cook out for a few minutes. Stir the flour into the sausage and cook for 1 minute. It’ll be sticky and dry. Gradually add in the vegetable broth, stir to combine. Continue cooking until the mixture reaches a simmer, then reduce heat to low and simmer for 15 minutes.
- While the soup is simmering - pre cook your cheese tortellini.
- Add the half & half to your soup, then bring it to a low simmer. Add the pre cooked tortellini and fresh spinach. Cook an additional 5 minutes until the spinach is wilted. Serve with fresh Parmesan, Basil and Italian Bruschetta toast for dipping. So yummy!! If you like it spicy add in some red pepper flakes.
Notes
- Choose High-Quality Sausage
- Opt for a high-quality Italian sausage, either mild or spicy depending on your flavor preference. Remove the casing for easier browning and better flavor infusion into the soup.
- Sauté the Sausage for Depth
- Sauté the sausage first until browned. This step enhances the flavor as it releases oils and spices that will serve as the base for your soup. Remove excess fat after browning to avoid greasiness.
- Add Aromatics
- Sauté onions, garlic, and carrots in the same pan used for the sausage. The sausage drippings will help caramelize these vegetables, adding complexity and depth to the soup.
- Use Fresh Herbs and Spices
- Season the soup with fresh herbs like thyme, basil, or rosemary for a more vibrant flavor. Crushed red pepper flakes can add a bit of heat if desired. If using dried herbs, add them earlier to allow their flavors to infuse fully.
- Add Spinach for Nutrition
- For added color and nutrients, stir in fresh spinach or kale just before serving. The residual heat will wilt the greens without overcooking them.
- Balance the Flavor
- After simmering, taste the soup and adjust the seasoning with salt and pepper. A splash of white wine or a bit of lemon juice can add brightness and balance the creaminess.
- Storing the Soup
- Allow the soup to cool completely before storing. Transfer it to airtight containers, and store in the refrigerator for up to 3-4 days. Keep the tortellini separate if you plan to store longer than a day, as it will absorb the liquid and become mushy.
- Freezing the Soup
- For longer storage, freeze the soup without the tortellini, as they tend to become overly soft when frozen. Store the base in an airtight container or freezer bag, leaving room for expansion. Freeze for up to 3 months. When ready to serve, thaw overnight in the fridge, reheat on the stovetop, and add freshly cooked tortellini.
