- Lemons: Zest 2 lemons. Then cut them in half and juice 3 of the halves.
- Greek Yogurt: Greek yogurt keeps the lemon poppy seed loaf moist and tender without needing extra oil or butter.
- Eggs: Use 2 large eggs.
- Avocado Oil - The healthy fats in avocado oil help your body absorb fat-soluble vitamins from ingredients like lemon zest and citrus juice.

How to Make a Honey Lemon Poppy Seed Loaf
Step 1: Preheat & Prepare
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with coconut oil or line it with parchment paper.

Step 2: Mix the Dry Ingredients
In a large bowl, whisk together:
✅ All purpose flour, baking powder, baking soda, salt, poppy seeds, and lemon zest.

Step 3: Mix the Wet Ingredients
In a separate bowl, whisk:
✅ Eggs, honey (or maple syrup), Greek yogurt, lemon juice, avocado oil, and vanilla extract until smooth.

Step 4: Combine & Bake
- Gently fold the wet ingredients into the dry ingredients until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack.

Step 5: Make the Honey Lemon Glaze
- In a small bowl, whisk together a pinch of powdered sugar, ¼ cup of honey, 1 tablespoon of lemon juice, and 1 teaspoon of lemon zest until smooth.
