Ingredients

  • 1 1/2 cups of All Purpose Flour
  • 1 Teaspoon of Baking Powder
  • 1/2 Teaspoon of Baking Soda
  • 1/4 Teaspoon of Sea Salt
  • 2 Tablespoons of Poppy Seeds
  • Zest of 2 Lemons
  • 2 Eggs
  • 1/2 cup of Honey or Maple Syrup
  • 1/2 cup of Plain Greek Yogurt
  • 1/4 cup of Lemon Juice
  • 1/4 cup of Avocado Oil
  • 1 Teaspoon of Vanilla Extract
  • Pinch of Powdered Sugar to Make the Glaze topping and add a sprinkle before serving.


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with coconut oil or line it with parchment paper.
  2. In a large bowl whisk together All purpose flour, baking powder, baking soda, salt, poppy seeds, and lemon zest.
  3. In a separate bowl whisk Eggs, honey (or maple syrup), Greek yogurt, lemon juice, oil, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let it cool in the pan for 10 minutes, then transfer to a wire rack.
  8. Make the Honey Lemon Glaze: In a small bowl, whisk together a pinch of powdered sugar, 1/4 cup of honey, 1 tablespoon of lemon juice, and 1 teaspoon of lemon zest until smooth. Once the loaf is completely cool, drizzle the glaze on top.
