Ingredients
- 1 1/2 cups of All Purpose Flour
- 1 Teaspoon of Baking Powder
- 1/2 Teaspoon of Baking Soda
- 1/4 Teaspoon of Sea Salt
- 2 Tablespoons of Poppy Seeds
- Zest of 2 Lemons
- 2 Eggs
- 1/2 cup of Honey or Maple Syrup
- 1/2 cup of Plain Greek Yogurt
- 1/4 cup of Lemon Juice
- 1/4 cup of Avocado Oil
- 1 Teaspoon of Vanilla Extract
- Pinch of Powdered Sugar to Make the Glaze topping and add a sprinkle before serving.
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with coconut oil or line it with parchment paper.
- In a large bowl whisk together All purpose flour, baking powder, baking soda, salt, poppy seeds, and lemon zest.
- In a separate bowl whisk Eggs, honey (or maple syrup), Greek yogurt, lemon juice, oil, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack.
- Make the Honey Lemon Glaze: In a small bowl, whisk together a pinch of powdered sugar, 1/4 cup of honey, 1 tablespoon of lemon juice, and 1 teaspoon of lemon zest until smooth. Once the loaf is completely cool, drizzle the glaze on top.
