Chicken Breasts - For this quick and easy chicken salad recipe we just picked up a pre-cooked Rotisserie Chicken at the supermarket. If you prefer to make your own chicken try out my cast iron chicken recipe.
Cottage Cheese - Using cottage cheese in chicken salad adds a creamy texture and boosts protein while keeping it lower in fat and calories compared to mayo.
Plain Greek Yogurt - Using plain Greek yogurt in chicken salad adds a rich, creamy texture while packing in extra protein, probiotics, and less fat than traditional mayo.
Teriyaki Sauce - We used House of Tsang Teriyaki Sauce for this homemade chicken salad. Kinders Teriyaki sauce is also great with this recipe. You can make this a Keto Teriyaki chicken salad by using G. Hughes Sugar Free Teriyaki.

1: Slice the chicken breasts off of your Rotisserie chicken and dice into small chunks and place in a medium sized bowl.
