Ingredients:
- 2 Cups of Raw Cashews Unsalted - you can mix in some sunflower seeds or even macadamia nuts for a nutty flavor.
- One Head of Fresh Garlic roasted - Try adding in some fresh onion, chili flakes and black pepper for a little spicy kick.
- A Block of Parmesan Cheese - make sure you get the vegan parmesan cheese for the best vegan alfredo sauce.
How to Make Creamy Cashew Pasta Sauce
Step 1 - Take your 2 cups of Raw Unsalted Cashews and soak them in water for about 30 minutes. Honestly I don't even think that was necessary but I did it anyway.
Step 2 - Take the Cashews and add them to your Nutribullet or High-Speed Blender or hopefully you have some sort of power blender if not you may want to wait on this recipe until you get one.
Step 3 - Add water to cover the nuts about 2 cups
Step 4 - Roast 1 head of Garlic. I roasted a head of Garlic in my air fryer for about 20 minutes you can also roast in the oven or toaster oven if you don't have an air fryer and once the garlic was soft I added about 5 cloves to my cashew water mix. You can add more or less depending on how much you like the flavor.
Step 5 -Next I had a block of parmesan cheese from which I cut off a decent size chunk and added that to the mix.
Step 6 - Close the lid on the high-powered blender and let it blend. In less than 5 minutes you have the creamiest white sauce. I like mine a little spicy so I added some red pepper flakes into the mix but you can add whatever you like. Be creative with your spices don't be afraid it's all good.

Expert Tips
- Cashew Cream Base: Start with a smooth cashew cream base. Soak raw cashews in water for at least 4 hours or overnight, then blend until creamy. This creates a rich and creamy texture for your sauce.
- Nutritional Yeast: Add nutritional yeast for that cheesy flavor without using dairy. It also provides a boost of vitamins and minerals.
- Lemon Juice: Incorporate fresh lemon juice to brighten up the flavors and add a subtle tanginess to your sauce.
- Almond Milk: Use unsweetened almond milk for a creamy consistency. It adds a subtle nuttiness that complements the cashews well.
- Dairy-Free Butter: Opt for vegan butter to add richness and depth of flavor to your sauce.
- Silken Tofu: For added creaminess, blend in some silken tofu. It helps achieve a smooth and velvety texture.
- Oat Milk or Soy Milk: These options also work well as dairy-free milk substitutes and contribute to a creamy texture.
- Coconut Milk: For an extra creamy and indulgent sauce, consider adding a small amount of full-fat coconut milk. It adds richness and a hint of tropical flavor.
- Sauteed Mushrooms: Enhance the depth of flavor by sautéing mushrooms separately and adding them to the sauce. They provide a savory umami element.
- Whole Grain Pasta: Pair your creamy vegan alfredo sauce with whole grain pasta for added fiber and nutrients.
- Sweet Potato Noodles: Alternatively, try serving your sauce over spiralized sweet potato noodles for a healthier, gluten-free option.
- Balancing Flavors: Taste and adjust the seasoning as needed. You may want to add a pinch of salt, garlic powder, or onion powder to enhance the flavors.
- Leftover Sauce Storage: Store any leftover sauce in an airtight container in the refrigerator for up to 4-5 days. Make sure to cool it completely before storing to maintain its freshness.
- Reheating: When reheating the sauce, do so gently over low heat on the stovetop to prevent separation. You may need to add a splash of dairy-free milk to loosen it up.
- Freezing: If you have a large batch of sauce, you can freeze it for later use. Transfer cooled sauce to a freezer-safe container, leaving some space for expansion, and freeze for up to 3 months.
- Thawing: Thaw frozen sauce overnight in the refrigerator before reheating. Stir well to reincorporate any separated liquids.
- Customization: Feel free to customize your sauce by adding herbs like basil or parsley for freshness, or red pepper flakes for a kick of heat.
- Consistency: Adjust the consistency of the sauce by adding more dairy-free milk if it's too thick, or simmering it longer to thicken if it's too thin.
- Blend Well: For the smoothest texture, blend the sauce in a high-speed blender until completely smooth and creamy.
- Enjoy Variety: Experiment with different variations of dairy-free milk and seasonings to find your perfect creamy vegan alfredo pasta sauce!
