Trying to spice up healthy weeknight meals is not easy, but this sheet pan chicken dinner was so simple to prepare. You only need a handful of ingredients and a large sheet pan to prepare this sheet pan chicken and veggies meal.
Chicken provides the healthy, lean protein in this dish accompanied by crunchy and juicy Bell Peppers and Red Onion.
What Color Bell Peppers should I use for this Sheet Pan Chicken Recipe?
You can use Green, Red, Yellow, Orange or even Purple. Or you can do what I did and use a variety of colors.

Red Peppers have the most nutrition..why you ask? Because the Red Peppers have been on the vine the longest. Green Peppers are harvested earlier, before they have a chance to turn yellow, orange and then red. Compared to the green bell peppers, the red ones have almost 11 times more beta-carotene and 1.5 times more Vitamin C.

I used white meat, Thin Chicken Cutlets but if you prefer Dark Meat chicken you can use Boneless Chicken Thighs.

Yes ,you could swap the Chicken for Sliced Flank Steak or Even Shrimp but you may have to take out the Protein before the full 20 minutes as those proteins may cook quicker than the Veggies.

What Kitchen Tools do I need for this Recipe?
- A good Knife for slicing
- A 13x18 inch Baking Sheet Pan
- A Taco Stand - not necessary but a Fun Accessory for Taco Night
Ingredients:
- 1 pound of thinly sliced Chicken Cutlets - cut into ½ inch strips
- 2 Bell Peppers cut into thin strips - use any color Bell Pepper or a Variety of Colors. ** Make sure you slice thin about ⅛ of an inch so they cook evenly with the chicken
- 1 Red Onion sliced thinly
- One packet of Taco Seasoning
- Olive Oil
Preparation Instructions:
1: Pre heat Oven to 425 Degrees F
2: Line your Baking Sheet Pan with Aluminum Foil and give it a spritz of Olive Oil so nothing sticks.
3: in a large bowl Toss Chicken Strips with 1 Tablespoon of Olive Oil and then add 3 Teaspoons of Taco Seasoning and Mix together well.
4: In a large bowl Toss your Sliced Peppers and Onions with 1 Tablespoon of Olive Oil and 2 Teaspoons of Taco Seasoning and Mix together well.
5: Take your Chicken and spread it out over one half of your sheet pan.
6: Take your Peppers and Onions mixture and spread it over the other half of your sheet pan.
7: Now place the baking sheet into the pre heated oven for 15-20 minutes.
8: Remove from oven when cooking is complete and serve on a Low Carb wrap and make Fajitas or put in Tacos ... or even better use both and make a Crunchwrap. Yum! Enjoy!
