For this Instant Pot Veggie Quinoa Recipe you will need an Instant Pot hopefully you have one and if you don't I highly recommend you get one it will make your life easier.
- One Cup of Tri Color Quinoa
- One cup of Reduced Sodium Chicken Broth ( You can use one cup of water if you do not have a Broth or use Vegetable broth if you are Vegan)
- One Carrot Peeled and Chopped Finely (Feel free to use your Vegetables of choice)
- ¼ of a Red Pepper,Yellow Pepper & Orange Pepper Chopped Finely
- Spray Olive Oil
- Season to your taste depending on your liking try one or a combination of these spices they truly enhance. (Cayenne pepper, Curry Powder, Tumeric, or Cumin)
Another great kitchen tool I use is the Mini Ninja Chopper it is great for chopping the carrots and peppers or any Raw Veggie. It is super easy to use and simple to clean and most important your mincing is complete in seconds.
1: Rinse your Quinoa under Cold Running Water with a Fine Mesh Colander
2: Spray your Instant Pot liner with Olive Oil Spray then add in your One Cup of Rinsed Quinoa with One Cup of Reduced Sodium Chicken Broth and the Minced Carrots and Peppers
3: Lock your Lid and set your valve to the sealing position
4: Select pressure cook for 1 minute on high pressure
5: It will take about 5 minutes for the pressure to build, then the countdown timer will start. Allow the pressure cooker to release naturally for 10 minutes and then release any remaining pressure before opening your lid.
