A Quick and Easy Veggie Quinoa Dish
Ingredients
- 1 Cup of Tri Color Quinoa
- 1 Cup of Reduced Sodium Chicken Broth or Vegetable Broth
- 1 Peeled and Chopped Carrot
- 1/4 of a Red Pepper, Yellow Pepper, Orange Pepper Chopped Finely
- Spray Olive Oil
- Season to taste with any one of these - Cayenne Pepper, Curry Powder, Turmeric or Cumin
Instructions
- Rinse your Quinoa under Cold Running Water with a Fine Mesh Colander
- Spray your Instant Pot liner with Olive Oil Spray then add in your One Cup of Rinsed Quinoa with One Cup of Reduced Sodium Chicken Broth and the Minced Carrots and Peppers
- Lock your Lid and set your valve to the sealing position
- Select pressure cook for 1 minute on high pressure
- It will take about 5 minutes for the pressure to build, then the countdown timer will start. Allow the pressure cooker to release naturally for 10 minutes and then release any remaining pressure before opening your lid.
- Now fluff with a fork and serve!
