Description

These Paleo Snickerdoodle cookies are made with grain free flours which means they are the perfect Gluten Free Cookie.


Ingredients

Scale
  • 1 3/4 Cup of Almond Flour
  • 1/4 Cup Coconut Flour
  • 1/2 Teaspoon of Baking Soda
  • 1/2 Teaspoon of Cream of Tartar
  • 1/2 Teaspoon of Sea Salt
  • 2/4 Teaspoon of Cinnamon
  • 1/2 Cup of Unrefined Coconut Oil
  • 1/3 Cup of Unrefined Maple Syrup
  • 1 Teaspoon of Vanilla Extract
  • Ingredients for the Cinnamon and Sugar Coating - 2 Teaspoons of Coconut Sugar and 1 Teaspoon of Cinnamon


Instructions

  1. Line a Baking Sheet with foil and give it a spritz of olive oil so the cookies do not stick
  2. In a Mixing Bowl stir together the Almond Flour, Coconut Flour, Baking Soda, Cream of Tartar, Salt & Cinnamon
  3. Next add in the Coconut Oil, Maple Syrup and Vanilla Extract and stir everything together.
  4. In a separate bowl mix your Coconut Sugar and Cinnamon this will be for your coating
  5. Now take a scoop of your dough mixture and roll into little balls about 1-2 inches kind of like little meatballs then take each ball and roll them in your Cinnamon and Coconut Sugar Mixture to give them a nice coating then place them on your baking sheet
  6. Now take a glass and use the bottom of it to flatten each dough ball to about 1/2 inch thick cookie 
  7.  Bake your cookies for ~15 Minutes or until Golden
  8. When ready, plate your cookies, let stand and Enjoy !!!
