- 1 3/4 cups of All Purpose Flour
- 1 Teaspoon of Baking Powder
- 1/2 Teaspoon of Baking Soda
- 1/2 Teaspoon of Sea Salt
- 1 Teaspoon of Cinnamon

- 2 Medium Ripe Pears - Peeled and Diced into Small Pieces
- 1/2 cup of Plain Greek Yogurt
- 3 Tablespoons of Avocado Oil or Coconut Oil
- 2 Tablespoons of Maple Syrup
- 2 Eggs
- 1 Teaspoon of Vanilla Extract
- Crumble Topping Ingredients:
- 1/2 cup of Grahama Cracker Crumbs
- 1/4 cup of Almond Flour
- 2 Tablespoons of Coconut Sugar
- 1/2 Teaspoon of Cinnamon
- 1 Tablespoons of Light Butter cold & cubed
Instructions
- Preheat oven to 350 Degrees F. Line a 12 cup muffin tin with parchment liners.
- Make your crumble - mix graham cracker crumbs, almond flour, coconut sugar, cinnamon and butter and set aside.
- Prep your pears - Peel your pears and dice into small chunks - pat with a dry paper towel to absorb excess moisture. This will help avoid soggy muffins.
- In a large bowl whisk together your dry ingredients - flour, baking powder, baking soda, salt, coconut sugar, cinnamon and nutmeg.
- In a separate bowl mix your wet ingredients - Greek yogurt, avocado oil, maple syrup, eggs and vanilla extract.
- Gently add your dry ingredient to your wet ingredients; mix until combined. Gently fold in your diced pears.
- Fill muffin cups. Divide batter evenly filling about 3/4 full. Top with crumble pressing lightly so it sticks.
- Bake 22-25 minutes, until muffins are golden and a toothpick inserted comes out clean.
- Cool 5 minutes in the pan then transfer to a wire rack to continue cooling. Enjoy!!!
