Description

If you’re looking for a cozy fall bake that celebrates fresh fruit, these Healthy Cinnamon Pear Crumble Muffins are the perfect balance of warm spices, juicy pears, and a crunchy streusel topping.


Ingredients

  • 1 3/4 cups of All Purpose Flour
  • 1 Teaspoon of Baking Powder
  • 1/2 Teaspoon of Baking Soda
  • 1/2 Teaspoon of Sea Salt
  • 1 Teaspoon of Cinnamon
  • 1/4 Teaspoon of Cinnamon
  • 2 Medium Ripe Pears - Peeled and Diced into Small Pieces
  • 1/2 cup of Plain Greek Yogurt
  • 3 Tablespoons of Avocado Oil or Coconut Oil
  • 2 Tablespoons of Maple Syrup
  • 2 Eggs
  • 1 Teaspoon of Vanilla Extract
  • Crumble Topping Ingredients:
  • 1/2 cup of Grahama Cracker Crumbs
  • 1/4 cup of Almond Flour
  • 2 Tablespoons of Coconut Sugar
  • 1/2 Teaspoon of Cinnamon
  • 1 Tablespoons of Light Butter cold & cubed


Instructions

  1. Preheat oven to 350 Degrees F. Line a 12 cup muffin tin with parchment liners.
  2. Make your crumble - mix graham cracker crumbs, almond flour, coconut sugar, cinnamon and butter and set aside.
  3. Prep your pears - Peel your pears and dice into small chunks - pat with a dry paper towel to absorb excess moisture. This will help avoid soggy muffins.
  4. In a large bowl whisk together your dry ingredients - flour, baking powder, baking soda, salt, coconut sugar, cinnamon and nutmeg.
  5. In a separate bowl mix your wet ingredients - Greek yogurt, avocado oil, maple syrup, eggs and vanilla extract.
  6. Gently add your dry ingredient to your wet ingredients; mix until combined. Gently fold in your diced pears.
  7. Fill muffin cups. Divide batter evenly filling about 3/4 full. Top with crumble pressing lightly so it sticks.
  8. Bake 22-25 minutes, until muffins are golden and a toothpick inserted comes out clean.
  9. Cool 5 minutes in the pan then transfer to a wire rack to continue cooling. Enjoy!!!

Notes

  1. Choose the Right Pears – Bosc pears or ripe Bartlett pears work best since they hold their shape when baked. Overripe pears are great for adding extra moisture and juicy pear flavor.
  2. Dice Pears Small – Cut pears into small pieces so they bake evenly and distribute juicy bits of pear throughout the muffin batter. Too large and they may sink to the bottom.

  7. Fill Muffin Cups Evenly – Use a cookie scoop or measuring cup to portion batter into a muffin pan lined with muffin liners. This ensures even baking and perfectly sized muffins.
  8. Check Doneness Correctly – Insert a toothpick into the center of a muffin. It should come out mostly clean with a few moist crumbs — not wet batter.
  9. Cool Before Storing – Let muffins cool on a wire rack before transferring to an airtight container. Storing warm muffins traps steam and makes them soggy.
