Description

Nothing says homemade comfort quite like Chocolate Peanut Butter Balls with puffed rice.

These crispy peanut butter balls combine creamy peanut butter, crispy rice cereal, and just the right touch of melted chocolate for the ultimate sweet treat.


Ingredients

  • 4 Sprays of Cooking Spray
  • 1 cup of Mini Marshmallows
  • 2 Teaspoons of Butter
  • 1 1/2 cups of Puffed Rice Cereal
  • 2 Tablespoons of PB2 Crunchy Powdered Peanut Butter
  • 1 Teaspoon of Coconut Oil
  • 2 Tablespoons of Chocolate Chips


Instructions

  1. Coat a large microwave safe bowl with cooking spray. Add the marshmallows and butter; microwave on high until completely melted, 1 - 1 1/2 minutes.
  2. Stir until smooth.
  3. Add the puffed rice and PB Fit Peanut Butter Powder into the melted marshmallow, stirring until well combined.
  4. Divide the mixture into 12 equal portions shaping each into a round ball. Place balls on a sheet pan lined with parchment paper.
  5. Melt your chocolate chips with the coconut oil in the microwave for 30 seconds until fully melted. Drizzle chocolate over each rice ball with a spoon. Chill in the fridge for 5-10 minutes.
  6. Ready to eat!

Use Good Quality Chocolate – The coating makes or breaks this recipe. Whether you choose milk chocolate, white chocolate, or dark chocolate chips, using a higher quality chocolate melts smoother and gives a glossy finish.
