Preheat your oven to 350 degrees F. Line a sheet pan with parchment paper.
- Use a tablespoon to place a circular dollop of cottage cheese onto your sheet pan, flatten slightly. Fill up your entire sheet pan with cottage cheese piles placed about 1 inch apart from each other.
- Sprinkle with your favorite seasoning.
- Place your sheet pan in the oven and bake 35-40 minutes until your chips look golden and crispy. You may find that the chips on the outer edge of the pan cook quicker - just remove the crispy ones and place your sheet pan back in the oven for an additional 5 minutes to crisp up the rest of the chips.
- Let chips cool and enjoy with your favorite low carb dip!

- Drain excess moisture - For the crispiest chips, place the cottage cheese in a fine mesh strainer or pat it dry with a paper towel before baking. Too much moisture will prevent crisping.
- Use parchment paper or a silicone mat - To prevent sticking, always line your baking sheet with parchment paper or a silicone baking mat. This also makes cleanup easier.
- Flatten for even baking - Use a spoon or the back of a spatula to gently flatten each dollop of cottage cheese into thin, even rounds. The thinner they are, the crispier they’ll get.
- Season before and after baking - Before baking: Mix in seasonings like garlic powder, onion powder, smoked paprika, or Everything Bagel seasoning. After baking: Sprinkle with sea salt, nutritional yeast, or chili flakes for an extra flavor boost.
- Flip midway through baking -
- For an even crunch, flip the chips halfway through baking. This ensures both sides crisp up properly.
- Let them cool completely - Cottage cheese chips crisp up more as they cool, so don’t be tempted to eat them straight from the oven. Let them sit for 5-10 minutes.
- Store in an airtight container - Keep them crispy by storing in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate and re-crisp in the oven.
- Reheat for extra crunch - If your chips soften over time, pop them back in the oven at 300°F for 5 minutes to restore their crunch.
