Description

Make a meal out of a Baked Potato with this Ultimate Baked Potato Recipe!


Ingredients

Scale
  • 1 Egg
  • 1 Cup of Cherrie Tomatoes
  • 1 Garlic Clove
  • 1 Medium Plain Baked Potato
  • 2 Tablespoons of Chopped Basil
  • 1 1/2 Tablespoons of Shredded Parmesan Cheese
  • A Pinch of Salt
  • A Pinch of Pepper


Instructions

  1. Prepare your Baked Potato - If you have the time nothing is better than an Oven Baked Potato which is how I prepared this Recipe. Take your Potato give it a quick rinse under water and pat dry. Then pierce the potato with a fork in a couple of spots then brush your potato with Olive Oil and then sprinkle with salt. Place your Potato on a foil lined baking sheet and place in the oven at 425 Degrees for 40 minutes. It will be perfection.
  2. Prepare your Poached Egg - Add 3 inches of water to a pot; bring to a boil over high heat. Reduce heat to Medium; carefully crack egg into boiling water (or crack egg into a bowl and slide into pot). Reduce heat to medium low and poach egg for 3 minutes in simmering water; remove with a slotted spoon and set aside. If you have not mastered the art of poaching an egg just prepare sunny side up instead.
  3. Break out your skillet; add olive oil heat on medium; add tomatoes and garlic; cook, stirring often until tomatoes soften, about 5 minutes.
  4. Cut a slit in the top of your Baked Potato; push ends in to fluff up the skin. Top with tomato mixture; sprinkle with Basil & Chives. Top with egg and shredded parmesan cheese; season with salt and pepper.
  5. Serve and enjoy!!
