Description

These crispy 3-Ingredient Sweet Potato Hash Brown Waffles are an easy, flourless breakfast made with sweet potato, shredded hash browns, and an egg. Golden and crispy on the outside, tender on the inside, and just Zero WW points per mini waffle! Made in a mini DASH waffle maker, this simple Weight Watchers recipe makes 4 delicious waffles perfect for breakfast, brunch or meal prep.

Ingredients

Units Scale
  • 1 medium microwave-ready sweet potato
  • 1/2 cup shredded hash browns
  • 1 large egg
  • Nonstick cooking spray for the waffle maker

Instructions

1: Cook Your Sweet Potato Until Fork-Tender

Place your microwave-ready sweet potato in the microwave and cook according to the package directions. Once it's tender, carefully remove it from the microwave and let it cool slightly. Peel off the skin and mash the sweet potato in a medium mixing bowl until smooth.

 2: Mix the Ingredients:

Add ½ cup of plain frozen shredded hash browns and 1 large egg to the mashed sweet potato. Stir everything together until well combined. The mixture should be thick and slightly chunky from the shredded potatoes.

3:  Preheat Your Mini DASH Waffle Maker

Always let your mini waffle maker heat up completely before adding the sweet potato mixture. A properly preheated waffle maker helps create those delicious golden edges.

4. Cook the Sweet Potato Waffles

Spoon approximately one-quarter of the sweet potato mixture into the center of the heated waffle maker. Gently spread it out, close the lid, and cook for approximately 5–8 minutes, or until the waffle is golden brown and crispy.

Tip: Resist the urge to open the waffle maker too early! Giving the waffle enough time to cook helps it hold together and develop those delicious crispy edges.

5. Remove and Repeat

Carefully lift the cooked waffle out using a silicone spatula. Transfer it to a wire rack or serving plate. Lightly spray the waffle maker again if needed, and repeat with the remaining mixture.

This recipe makes approximately 4 mini sweet potato hash brown waffles.

6. Serve and Enjoy!

Serve your crispy sweet potato waffles warm, straight from the waffle maker! They're delicious on their own or paired with scrambled eggs, fresh fruit, or your favorite breakfast toppings.

For a savory twist, try a sprinkle of everything bagel seasoning or a little hot sauce!

WW Tip: These waffles are 0 WW Points each, based on the ingredients entered into the WW app. Remember to check the points for any toppings or additions you choose.
