Description

Instant Pot Stuffed Bell Peppers filled with a savoury meat, spices and a rich marinara sauce


Ingredients

Scale
  • 4 Large Bell Peppers, tops and seeds removed.
  • 1 Package of Chicken Chop Meat - you can use turkey chop meat, beef of pork...the stuffing ideas are endless souse what you love.
  • 2 Garlic cloves minced
  • 3 Tablespoons of tomato sauce
  • 1/2 teaspoon of Sea Salt
  • 1/4 teaspoon of Ground Black Pepper
  • 1/2 tablespoon of Italian Seasoning
  • 1/2 teaspoon of Onion Powder
  • Shredded Mozzarella


Instructions

  1. Using a fork or toothpick pierce small holes into the bottoms of the peppers to allow excess fat from the meat to drain. Set aside
  2. In a large mixing bowl combine the chop meat, egg, garlic, tomato sauce, sea salt, black pepper, Italian Seasoning, and onion powder and mix thoroughly to combine
  3. Stuff each Bell Pepper with the meat mixture, filling each pepper nearly to the top
  4. Place the Steam Rack in the Inner Pot of your Instant Pot and add 1 cup of water. Place stuffed peppers bottom-side-down on the rack. Pour tomato sauce over the top of each pepper
  5. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Pressure Cook and set the cook time for 26 minutes
  6. When the cook time is complete, allow the pressure to release naturally for 5 minutes and then quick release the remaining pressure
  7. Open the lid and top each pepper with some shredded mozzarella. Replace the lid, select stay warm, and set timer for 2 minutes to melt the cheese
  8. Open the lid and use a large spoon and tongs to carefully transfer the peppers to a large serving platter
  9. They come out super juicy and tender so be careful when you are transferring from the pot to the plate as they can break easily.
