A Quick and Easy Greek Style Grilled Eggplant Recipe with Classic Mediterranean Ingredients
Ingredients
- 1 Eggplant
- 2 Tablespoons of Olive Oil
- 2 Teaspoons of Oregano
- 1 1/2 Teaspoons of Balsamic Vinegar
- 1/2 Teaspoon of Salt
- 1/8 Teaspoon of Crushed Red Pepper
- 1/8 Teaspoon of Garlic Powder
- 6 Tablespoons of Crumbled Feta Cheese
- Cooking Spray
Instructions
- Slice - Slice Eggplant into 1/2 inch slices.
- Preheat - Preheat grill to medium high - I used my stovetop indoor grill.
- Mix - In a small bowl make your Greek dressing by combining your Olive Oil, oregano, balsamic vinegar, 1/4 teaspoon of salt, red pepper flakes and garlic powder; whisk together.
- Coat - Spray Eggplant slices with Spray Olive Oil on both sides then sprinkle with 1/4 teaspoon of salt.
- Grill - Grill Eggplant until lightly charred and tender, turning as needed. About 10 minutes
- Topping - Transfer Eggplant to a serving platter, brush dressing over eggplant. Sprinkle with Feta and garnish with Oregano.
