Description

Can a Small Change Like Choosing a Healthier Snack Help You Drop Pounds? Absolutely! If you've been looking for great ways to jumpstart your weight loss journey and feel more confident in your clothes, let me introduce you to one of my new favorite snacks: Frozen Yogurt Blueberry Bark with Graham Crackers.

Ingredients

Units Scale
  • 2 cups of Plain Low Fat Greek Yogurt
  • 2 Tablespoons of Agave Nectar
  • 1 Teaspoon of Lemon Zest
  • 1 Teaspoon of Fresh Lemon Juice
  • 2 cups of Fresh Blueberries

Instructions

  1. Line a 9x13 inch sheet pan with aluminum foil or parchment paper.
  2. In a medium bowl combine Greek yogurt, agave, lemon zest and juice. Mix well then add in half of the blueberries and 6 tablespoons of crushed Graham Crackers.. Use a spatula to spread into an even layer in your prepared pan. Sprinkle with remaining Graham Crackers.
  3. Cover the pan with aluminum foil and place in the freezer for 1 hour.
  4. Remove from the freezer and cut into 16 squares. You can use your hands to crack into pieces or a large knife or pizza cutter. Keep store in an airtight container in the freezer as it does melt quickly.
  5. If you are a chocolate lover like me add a drizzle of dark chocolate over the frozen yogurt bites.

Notes

Expert Tips and Recipe Variation Ideas:

  • Opt for full-fat or Greek yogurt to achieve a creamier texture and richer flavor. Non-fat yogurt works too but may result in a slightly icier bark.
  • If your yogurt isn’t sweetened, use natural sweeteners like honey, maple syrup, or a few drops of liquid stevia. Adjust sweetness to taste to keep it healthy yet delicious.
  • Spread the yogurt mixture evenly across a parchment-lined baking sheet for uniform thickness. Aim for about 1/4 to 1/2 inch thickness to ensure the bark holds together without being too thin.
  • Place whole graham crackers under the yogurt for a crunchy, flavorful base that pairs beautifully with the tangy yogurt and sweet blueberries.
  • Sprinkle chia seeds, hemp hearts, or ground flaxseeds on top for added fiber, omega-3s, and texture.
  • Add sliced strawberries, kiwi, or raspberries alongside the blueberries for a colorful and nutrient-packed bark.
  • Add a pinch of cinnamon, vanilla extract, or even a hint of lemon zest to the yogurt for an extra layer of flavor.
  • Freeze the bark for at least 1 hour or until it’s fully solid. Once frozen, break it into pieces and store them in an airtight container or freezer bag. Layer the pieces with parchment paper to prevent sticking.
  • Homemade frozen yogurt bark stays fresh in the freezer for up to two weeks. Be sure to seal it tightly to avoid freezer burn and preserve the texture and flavor.
  • Drizzle melted dark chocolate or sprinkle mini chocolate chips over the bark before freezing for a touch of indulgence. Alternatively, use cacao nibs for a healthier, crunchy chocolate flavor.
