Notes
- Choose full-fat cottage cheese: This adds richness and moisture to your cookies, resulting in a soft and tender texture.
- If you want sweeter cookies - Cream your sugars well: For a perfect blend of sweetness, use a mix of brown sugar and coconut sugar. The brown sugar adds moisture while coconut sugar provides a subtle nutty flavor.
- Chill the dough: After mixing, refrigerate the dough for at least an hour. This helps the cookies maintain their shape and enhances flavor development.
- Use a mix of chips: Combine dark chocolate chips, chocolate chunks, and butterscotch chips for a delightful variety of flavors in every bite.
- Add almond extract: Just a teaspoon can elevate the flavor profile of your cookies, giving them a unique and delicious twist.
- Use parchment paper for baking: Line your baking sheets with parchment paper to prevent sticking and ensure even baking.
- Spoon and level your flour: Avoid packing the flour into the measuring cup. Spoon it in and level it off for accurate measurement, preventing dense cookies.
- Mix cottage cheese thoroughly: Ensure the full-fat cottage cheese is well incorporated into the dough for even distribution and texture.
- Fold in the chips: Gently fold in the chocolate chunks, dark chocolate chips, and butterscotch chips to avoid overmixing the dough.
- Bake until golden: Keep an eye on the cookies and bake them until they are just golden around the edges to keep the centers soft and chewy.
- Cool on wire racks: Let the cookies cool on wire racks to maintain their texture and prevent sogginess.
- Store properly: Place your cookies in an airtight container for longer storage. This keeps them fresh and maintains their flavor.
- Use resealable plastic bags: For added convenience, store your cookies in resealable plastic bags to maintain freshness and easy access.
- Freeze for later: Place your cookies in a resealable freezer bag with wax paper between layers. This allows you to enjoy fresh cookies anytime.
- Revive stored cookies: If your cookies lose their softness, place a slice of bread in the airtight container or resealable plastic bag. The cookies will absorb moisture from the bread and become soft again.
