Ingredients

  • 1/4 cup Maple Syrup or Honey
  • 1 Teaspoon of Vanilla Extract
  • 1 cup of Almond Flour
  • 1/2 cup of Vanilla Protein Powder
  • 2 Tablespoons of Coconut Oil
  • 1/2 cup of Chocolate Chips


Instructions

  1. Preheat oven to 325 degrees F. In a small food processor or blender, add the cottage cheese, maple syrup and vanilla extract. Pulse until smooth and creamy.
  2. Transfer that mixture to a large bowl and mix with the almond flour, protein powder and coconut oil until combined, Fold in the chocolate chips.
  3. Chill the dough for 30-60 minutes in the fridge.
  4. Use a cookie scooper to form your balls and place them on a baking sheet lined with parchment paper. Press to flatten slightly. Add some more chocolate chips to the tops and bake at 325 degrees F until the edges are golden brown about 13-15 minutes. Transfer to cooling rack and let cool to room temperature.
