  • 1 Ripe Banana Mashed
  • 1 cup of Creamy Peanut Butter
  • 1/3 cup of Honey
  • 1/2 cup of Plain Greek Yogurt
  • 10 ounces of Dark Chocolate Melted
  • Pinch of Flaky Sea Salt

Instructions

  1. In a medium bowl mix together mashed banana, peanut butter, honey, Greek yogurt and peanuts.
  2. Spoon 8-12 dollops of peanut butter batter onto a baking pan lined with parchment paper. Place in the freezer for 1-2 hours to chill.
  3. Melt chocolate chips in a double boiler or microwave.
  4. Remove peanut butter clusters from the freezer and coat in melted chocolate. Sprinkle with sea salt and crushed peanuts if you like extra crunch then place back in the freezer for 10 minutes.
  5. Remove from freezer and enjoy your dessert!!

Notes

  • Choose bananas that are fully yellow with a few brown spots for natural sweetness and smooth mashing without being overly watery.
  • Mix mashed bananas, Greek yogurt, peanut butter, and honey until smooth and creamy. Using a food processor or whisk can help achieve a silky consistency.
  • Start with 1 tablespoon of honey and adjust to taste. If your bananas are very ripe, you may need less honey for a naturally sweet bite.
  • Refrigerate the filling for 15-20 minutes before scooping onto parchment-lined trays. This makes it firmer and easier to handle.
  • Use a small cookie scoop or spoon to portion the mixture evenly, creating bite-sized dollops for freezing.
  • Freeze the yogurt-banana bites for at least 2 hours or until completely solid. This ensures they don't fall apart when dipped in chocolate.
  • Melting Chocolate Tips
  • Microwave: Heat chocolate chips in a microwave-safe bowl in 20-second intervals, stirring until smooth.Double Boiler: Place a heatproof bowl over simmering water and stir until melted.Tip: Add 1-2 teaspoons of coconut oil for a smoother, shinier coating that sets perfectly.
  • Dip the frozen bites one at a time in the melted chocolate using a fork or dipping tool. Immediately sprinkle sea salt and chopped peanuts before the chocolate sets.
  • Place the chocolate-coated bites on a parchment-lined tray and freeze for at least 1 hour until fully set.
  • Transfer bites to an airtight container or freezer bag. Separate layers with parchment paper to prevent sticking.
