My personal journey led me to create Crispy Cheesy Parmesan Onion Ring Chips—a delicious way to enjoy all the flavor and crunch of classic onion rings without the deep fryer or the carb count!
Ingredients
- One large white onion sliced thinly with a knife or mandolin
- 2 cups of Shredded Parmesan Cheese
- 1 Teaspoon of your favorite seasoning - we used Ranch and Onion Powder
Instructions
- Preheat & Prep: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
- Slice the Onion: Using a knife or mandolin, slice the large white onion into thin rings (about ¼-inch rounds). For safety, use a cut-resistant glove if using a mandolin.
- Layer the Cheese & Onion: Sprinkle a generous layer of shredded parmesan cheese evenly onto the parchment-lined baking sheet.
- Add Onion Slices: Arrange the onion slices in a single layer on top of the cheese. Make sure they are slightly spaced apart to allow even crisping.
- Season & Top with More Cheese: Sprinkle the ranch seasoning (or your preferred seasoning) over the onions, then add another layer of shredded parmesan cheese on top.
- Bake to Perfection: Place the sheet in the preheated oven and bake for 15-18 minutes, or until the cheese is melted and turns a golden brown crisp.
- Cool & Slice: Remove from the oven and let the onion crisps cool completely. Once set, carefully slice into chips or break apart into crispy bites.
- Enjoy! Serve immediately with your favorite dip or enjoy as a low-carb, crunchy snack on its own!

1️⃣ Use Fresh, Firm Onions – Choose large white onions with a firm texture for the best crispy chips. Softer onions can release too much moisture, making them soggy.
2️⃣ Slice Evenly for Consistent Crispiness – Use a sharp knife or mandolin to slice ¼-inch rounds evenly. This ensures they cook at the same rate. Wear a cut-resistant glove for safety when using a mandolin.
3️⃣ Pat Dry for Extra Crispiness – Before layering, pat the onion slices dry with a paper towel. This removes excess moisture and helps them crisp up better.
4️⃣ Shred Your Own Parmesan – Pre-shredded parmesan contains anti-caking agents that can prevent proper melting. Freshly shredded parmesan creates a more even, crispy texture.
5️⃣ Season Between Layers – To get maximum flavor, sprinkle seasonings like garlic powder, smoked paprika, or ranch seasoning between the layers of parmesan cheese and onions.
6️⃣ Bake on Parchment Paper – This prevents sticking and allows the cheese to crisp up properly without burning. A silicone baking mat also works well.
7️⃣ Let Them Cool Completely – Once out of the oven, let the chips cool on the pan for 5-10 minutes. This helps them set and get that perfect crunch.
8️⃣ Best Storage Method – Store leftover onion ring chips in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days. Use parchment paper between layers to prevent sticking.
9️⃣ Reheating for Crispiness –
🔥 Oven: Preheat to 350°F and bake for 5 minutes.
🔥 Air Fryer: Reheat at 350°F for 3-4 minutes.
🔥 Skillet: Heat over medium heat for a quick crisp refresh.
(⚠ Avoid microwaving, as it makes them soft.)
🔟 Experiment with Cheese Blends – While parmesan is ideal, you can mix in asiago, pecorino romano, or cheddarfor different flavors. Just keep the parmesan as the base for the best crisp!
