Description

Welcome back to the kitchen, fellow food enthusiasts and Weight Watchers! Today, I have a delightful treat in store for you that perfectly embodies the essence of balance and flavor.

If you're like me, you're constantly seeking that sweet spot between satisfying your cravings and staying on track with your health and fitness goals. Well, my friends, you're in for a real treat with this homemade Chocolate Pumpkin Date Bark recipe.

Ingredients

Units Scale
  • 20 Pitted Dates
  • 8 ounces of Canned Pumpkin
  • 6 ounces of Chocolate Chips
  • 1 Tablespoon of Coconut Oil
  • A Pinch of Sea Salt

Instructions

  1. Take a small baking pan and line with parchment paper. Now place your pitted dates onto the pan next to each other in rows of 5 across using all 20 dates.
  2. Now place another sheet of parchment paper on top of the dates and use the bottom of a glass or jar to flatten your dates making them as thin as possible. It may help to slice the dates open prior to placing them on your pan if your prefer a thin bark candy.
  3. Now remove the top sheet of parchment paper and spread the pumpkin over the flattened dates covering them all.
  4. Place your chocolate chips with one tablespoon of coconut oil in a microwave safe bowl. Microwave in 30 second increments until the chocolate melts into a nice spreadable consistency.
  5. Spread the melted chocolate over the pumpkin until everything is covered. Sprinkle with sea salt and place in the freezer for 1 hour.
  6. Remove from freezer and break into pieces by hand or with a mallet. Ready to eat...enjoy!!

Notes

  • Use High-Quality Chocolate: Start with good-quality dark chocolate, preferably with a cocoa content of at least 70%. This will provide a rich chocolate flavor without the need for excessive sugar.
  • Measure Ingredients: Accurate measurements are crucial for portion control. Use a kitchen scale to weigh your ingredients for precise tracking of Weight Watchers points.
  • Choose Pumpkin Puree: Opt for unsweetened canned pumpkin puree, as it adds pumpkin flavor without added sugars or extra points.
  • Sweeten Mindfully: Use a sugar substitute like stevia or erythritol to sweeten the pumpkin mixture. Be cautious not to over-sweeten, as pumpkin already has natural sweetness.
  • Spice it Up: Add warm spices like cinnamon, nutmeg, and cloves to your pumpkin mixture for that cozy fall flavor. Remember to adjust quantities to your taste.
  • Go Easy on Mix-Ins: If you want to add mix-ins like nuts or seeds, use them sparingly to keep the point count in check. Chopped pecans or pumpkin seeds work well.
  • Pumpkin Spice Extract: Consider using a pumpkin spice extract to intensify the pumpkin flavor without adding extra sugar.
  • Use Parchment Paper: Line your baking sheet with parchment paper to prevent sticking and make it easier to remove the bark later.
  • Melt Chocolate Gently: When melting the chocolate, do it in a microwave or a double boiler over low heat to avoid scorching. Stir frequently for even melting.
  • Layer Thinly: Spread your melted chocolate thinly on the parchment paper to create a more delicate, satisfying crunch with each bite.
  • Swirl the Pumpkin: Drizzle the pumpkin mixture over the melted chocolate in a decorative pattern. Use a toothpick or a skewer to create swirls.
  • Chill Properly: Allow the chocolate bark to set in the freezer for at least 1-2 hours, or until it's completely firm. This ensures a nice snap when you break it into pieces.
  • Portion Control: After it's fully set, cut your bark into small, bite-sized pieces. This will help you manage portion sizes and control your points intake.
  • Store Correctly: Keep the pumpkin chocolate bark in an airtight container in the fridge. It should stay fresh for up to two weeks. You can also freeze it for longer storage.
  • Enjoy Mindfully: Savor each piece and take your time to enjoy the flavors. Being mindful of what you eat can help you feel satisfied with smaller portions.
  • By following these expert tips, you can create a delicious homemade pumpkin chocolate bark that's not only Weight Watchers-friendly but also bursting with the flavors of fall. Enjoy your treat guilt-free!
